Beef Ribs Kerala Style | No Oven Bake & Braise | Braising Hack | ബീഫ് വാരിയെല്ല് | തനി നാടൻ ബീഫ്

INGREDIENTS

FOR MARINATION

300g beef short rib (1 serving)
½ tsp salt
½ tsp cayenne pepper
½ tsp garlic powder
½ tsp black pepper powder

FOR BRAISING
3 cups orange/apple juice
10 tbsp sunflower oil/or any non-flavored oil

for final baking (without oven) masala
Oil from the seared beef
2 medium size onions sliced
3-4 cloves of crushed garlic
½ inch size crushed ginger
1 stem curry leaves
2 medium tomatoes
Salt to taste
1 tsp turmeric powder
1 ½ tbsp coriander powder
1 tbsp red chili powder
1 tsp garam masala
3 tbsp yogurt/curd
Sliced lemon

METHOD
Marinate the 300g beef rib with the mentioned spices and keep aside for ½ hour or refrigerate overnight.
Heat 10 tbsp of any non-flavored cooking oil in a heavy frying pan.
When the oil is hot enough, sear the beef rib with the meat side facing the pan.
Do not disturb till 3 minutes
now flip the rib and sear for a minute on all sides.
This will give a really nice color.
Remove the beef from the oil and place into a pressure cooker
Am using pressure cooker to braise instead of an oven.
Pour in 2 cups of orange juice.
Put the pressure cooker on high flame and wait for the first whistle, then simmer it to the lowest heat and cook it for 1 hour
Meantime lets prepare the masala to bake
Heat the same oil used to sear the beef rib and add in 2 medium sliced onions and salt to taste. Saute till they start to caramelize.
Now add 3-4 cloves of crushed garlic and ½ inch size crushed ginger. Saute for few minutes and add a stem of curry leaves.
Saute everything till they get golden brown and add 2 medium sized sliced tomatoes
Saute them till everything is caramelized.
Now add 1 tsp turmeric powder and stir for 15 to 20 seconds, add 1 ½ tbsp coriander powder. Stir well for few minutes and add 1 tbsp red chili powder and 1 tsp garam masala.
Saute till everything is golden brown.

After one hour open the pressure cooker and take out the beef rib and place on a foil paper/ banana leaf
Spread 1 tbsp of curd/yogurt and the prepared masala over the beef rib.
Lay some sliced lemon on the top and seal the foil paper.
Now place a heavy bottom pan on low flame and a similar small pot on top of the pan and place the rib(in the foil) inside the pot.
No need to preheat the pan.
Cover the pot with a perfectly fitting lid and bake for 20 minutes on low heat.

Meanwhile
Pour 1 cup of orange juice to the pressure cooker (used for braising)
scrape all the meaty goodness and pour into a pan and reduce it to a thick saucy glaze

After 20 m,inutes take out the beef rib and plate with a drizzle of curd/yogurt and the glaze we made.
Garnish with some curryleaves.
Enjoy with a chilled bottle of beer and your favorite tv show *wink wink*
