Before the Turkey, Make some Jerky! S2E12: Beef Jerky

Today, Bob makes some beef jerky for the first time!

First he takes bottom round roast and slices it 1/8 to 1/4 inch thin. Then those slices he trims into strips.

Then he marinates it in beef jerky cure/seasoning. Now he did get this mix from Cabela’s. He prefers the Peppered.

You follow the instructions on the box for amount of water. I used 1/2 a packet of Peppered and 1/2 of Teriyaki. You mix the seasoning packet, a curing packet and water together. Then after mixed, I marinated the meat with it in a zippered bag. I marinated it overnight, it was probably 12 hours, but you could go up to 24 hours. Make sure to mix the bag around every few hours or so to make sure all the meat is covered.

Then I prepared my offset smoker to smoke at 180°. I used B&B charcoal briquettes and some applewood I had lying around.

I smoked the smaller pieces for 4 hours and the thicker, bigger pieces stayed in the smoker for about 5.5-6 hours.

I store in a plastic bag in the fridge. It should stay good in there for a week or so, but of course it didn’t last that long.

Next time I might try my hand at making my own Jerky Marinade! 🙂
