Beef Ribs
When I first tried beef ribs I was amazed by the deep beef flavor of the meat.
These ribs are fairly easy to cook, I highly recommend you give them a try, they can be cooked on any smoker.
I used a 3 rib plate which weighed about 6-7 pounds.
Most likely you will need to find a local butcher as this cut of beef is rarely found in a super market.

1 – 3 Bone Beef Rib Plate 6-7 LBS
1/8 Cup of Worcestershire Sauce
1/4 Cup of Kosmo’s Texas Beef Seasoning
1/4 Cup of Kosmo’s Cow Cover
1/2 Cup of Kosmo’s Brisket Mop Sauce

As I mentioned above this recipe is simple. First trim as much fat as possible off of the rib plate and remove the membrane and silver skin from the back.
For this recipe I used Worcestershire Sauce as the binder and spread it liberally.
I then applied both the Cow Cover and the Texas Beef to the ribs being certain to hit all sides of the meat.
I let the meat rest until I brought my pellet smoker up to 225 degrees.
I used oak pellets for the fuel source on this cook.
After the rest I placed the ribs on the smoker with the thickest end towards the hottest side of grill.
The ribs cooked for 5 hours, at this point I applied the mop sauce and inserted my meat thermometer.
The ribs cooked for another 2 hours which is when the temp reached 200 degrees.
I removed the ribs and wrapped them, they rested for a half hour.
