welcome back to another episode of UncleBen’s optigrill today we’re gonna bedoing some lollipop chicken legs rapsong and bacon put a honey glaze I havea chickens prepped and ready to go we’regonna be using granulated garlichomemade barbecue sauce honey Hickorybarbecue roe and thick-cut maple bacon[Music]okay now I’m gonna show you how tolollipop the chickens we’ve already donea few in advance so you can see whatthey’re gonna look like so now some ofthe items you’re gonna need is a sharpKnight some shears and then what youwant to do is you want to take thislittle part of the chicken here this isthe joint you want to cut that joint offso that’ll help you to stand yourchickens up a little straighter thenonce you do that you want taken pullthat skin tight on the chicken and cutall the way around trying to cut thoseligaments sometimes it can be a littledifficult and on and you see here injust a second that’s why you need thoseown shears to help you wanna finishcutting through the chicken so then youwant to try to take that take yourshares and then finish cutting thoseligaments and then once you get thoseligaments cut through it will all helpyou just pull the skin over the knuckleso you can see here I’m having a littlebit of trouble getting it off myself andI think that’s because I got some ofthose ligaments that I need to wannafinish cutting loose let’s see youalright let’s finish getting theseligaments cut here and then see if wecan get that skin over that knuckle andjust try to take it some time it can bea little difficult but you get the hangof it the more you do it the better itgetyou just have to kind of work with itand also you can use a towel to helppull that off because that chicken skincan be kind of slippery if you just usea towel they help you to grab it betterand pull it off a little easier and thenany other ligaments you have there mightbe kind of straggly you just want tokind of clean that up a little bit tomake it look a little betterit makes your presentation look a wholelot better if you get all that off themore you get off the better it looks andthen once you cook it down you won’teven notice it and then just take theselittle straggler ligaments here and cutthose off and then pull that skin downtight on your chicken that kind of helpsit on stand up a little better also itmakes it look a lot a lot nicer this ishow your chicken should look once youare finished lollipop on it now we readyto season our chickens we’re gonna beusing in the coments Hickory barbecuerub and granulated garlic also we havesome thick maple bacon we like to use athick cut bacon because it holds upbetter on the smoker that no get it’scrispy but you can use Applewood cherrybacon pepper bacon all the bacon changesto flavor then we’re gonna put ourchickens on the smoker for about threeto four hours and let them smoke andafter that we’re gonna use our homemadebarbecue sauce with a little bit ofhoney we gonna season our chickens withthe Hickory barbecue rub from McCormicka little bit of granulated garlic andalso we’re gonna wrap some of thesechickens and bacon and then we’re gonnaput them on a smoker so what you want todo is make sure the internal temperatureor your chicken is up to 165 degreesminimum what we probably cook these alittle bit longthe internal temperature get up to about175 when they’re helping be a lot moretender so and don’t so much worry aboutthe time as the temperature so make sureyou have something to take yourtemperature with now I’m going to showyou how to route these chickens with thebacon just take your bacon and hold itwith your thumb and just kind of roll itaround then once you’re finished gettingthat roll around you want to kind oftake it and tuck it underneath itselfdaddy help the bacon stand if that don’twork you can always use a toothpick tohold it in[Music][Applause][Music][Applause][Music][Applause]all right now we have all the chickenlegs wrapped in bacon we also helpedsome does not wrapped in bacon we gotour smoker already preheated to 250degrees the main thing is remember it’snot time this temperature once atemperature to reach a minimum internaltemperature for poultry is 165 degreeswhat we gonna cook these to about 175 to180 look let me show you on one morestep we won’t take some aluminum foiland wrap it around the ends of yourchicken legs this is not necessary isthere some option this will allow thebone not to become so dark from thesmoking keep inside of the grill but itis optional not necessary the bones ofthis become a little darker if you don’tdo this you can make that decisionwhether you want to do it or not to doit is this extra time all right for realnow out to the smokerall right into the smoker we go todaywe’re cooking on the pit-boss verticalfire smoker we got our temperature setto 250 degrees and we’re going on a lotof chickens to cook and today reach aninternal temperature of 165 but we usedto see them for 175 to 180now that we removed the floor from mylollipop chickens we’re gonna take anydiplomat our homemade barbecue sauce andI’m gonna put them back on the grill forabout 30 minutes or so to allow thebarbecue sauce to stick to the chickensokay now I’m gonna take our chickens anddip them in our homemade barbecue saucethen put them back out on the grill andI can caramelize to let that barbecuesauce adhere to the chicken and then wealso put it over to bond to so it’ll geta little glaze on the bone we make thebone shine just a little bit[Music][Applause][Music][Applause][Music][Applause][Music]now that we have all our chicken legsdip in the homemade barbecue sauce and alittle honey drizzle we’re gonna takethem and put them back out on the grillfor another twenty to thirty minutes andlet that sauce caramelize on them we’regonna get them plated up and we won’ttry one and see what he do[Music]now that we have our chicken lollipopsdone and plate it up you’re gonna let mybrother-in-law here today
