BBQ Chicken Buns Recipe | #StayHome and cook #WithMe | Chef Delz

Recipe :
Spice Rub :
Ingredients :
Paprika powder – 2 tbsp
Jeera/ Cumin Powder – 2 tbsp
Pepper powder – 1.5 tbsp
Method:
1. Combine all the powders and mix together

BBQ Chicken Filling :
Ingredients :
Chopped onions – 1 medium
Tomato ketchup – 200 g
Boneless Chicken – 300 g
Vegetable oil – 2 tbsp
Soya sauce – 3 – 4 tbsp
Grated Mozzarella – 100 g
Salt – to taste
Method:
1. Heat oil in a pan, add the onions and cook till brown.
2. Add 2 tbsp of the spice rub
3. Add the ketchup, soya sauce and salt and mix it up
4. Simmer the BBQ sauce for 5 – 7 mins and keep aside
5. Slice the chicken breast lengthwise
6. Season with salt and the spice rub
7. Heat a pan and grease it with oil
8. Sear the chicken in the pan on both sides
9. Add the BBQ Sauce and allow to simmer for 15 mins
10. Once cooke, allow the chicken to cool
11. Then shred it up and combine with the cheese

Bun Dough:
Ingredients:
Flour/ Maida – 200g
Yeast – 8 g
Sugar – 10 g
Salt – 5 g
Eggs – 2 nos
Butter – 25 g
Milk – 30 ml
Method :
1. Add yeast and sugar to 90 ml warm water.
2. Allow it to bloom
3. Add salt to the flour , add the yeast mixture and begin to bring together
4. Add the butter and 1 egg and bring the dough together
5. Knead the dough for 5 – 7 mins
6. Place the dough on a floured surface
7. Cover with a damp cloth and allow to proof ( till double in size )
8. Once proofed, knock back all the excess air from the dough
9. Divide the dough into 6 equal pieces
10. Round up each piece into a ball

Egg Wash
Ingredients:
Eggs – 1 pcs
Milk – 30 ml
Salt – a pinch

For the Assembly and Baking
1. Flatten out each ball and place 1.5 tbsp of the filling in the centre
2. Seal and re shape into a ball
3. Place on a greased baking tray and proof again till double in size
4. Make egg wash with 1 egg yolk , milk and salt
5. Coat the proofed buns with the egg wash and bake @180 C for 35 mins or till the surface browns uniformly
