BBQ Chicken Pulao/Chicken BBQ Rice

A recipe that would do well for a special occasion with minimal effort but great flavors…?
Ingredients:
Chicken Marinate :-
2 chicken legs
Salt to taste
2 tbsp oil
Juice of a lime
Powders:
1.1/2 tsp turmeric
1 tsp red chilli
1 tsp cardamom
1 tsp pepper
1 tsp clove

Pulao:
2 cups basmati rice
4 cups water
1/4 cup oil
1 cinnamon stick
4 cardamom
3 bay leaves
8 pepper balls
4 cloves
1.1/2 garlic ginger paste
1 sliced lemon
4 green chillies
Chopped coriander
1/2 cup fried onion
2 tbsp raisin
2 tbsp almonds
5-6 strands saffron
2 tsp milk

Method:
Place chicken legs in a bowl. You could make the piece smaller. Do not forget to slit the chicken for the spices to seep in. Add garam masala, clove, turmeric, red chili, cardamom, pepper powder and salt to taste. Juice of a lime and combine all the spices well. Set aside for an hour. You could bake the chicken for 30min at 175c . Cover the dish with foil to keep the chicken moist . Once the chicken is naked it will be nice and juicy, you could use the stock for the rice also.

Instead of baking , you could grill chicken on a pan. Brush a heated pan with oil. Once the pan is heated add the maranated chicken. Cover and cook on medium flame. Brush little oil on the chicken before you flip it. Cook on low flame for 10min.

Wash the rice well but do not soak it. Heat a heavy bottom pan. Add oil and let it heat. Then add cinnamon sticks , cardamom, bay leaves, pepper balls, clove and garlic ginger paste. Stir all the spices for two to three mins and add the washed rice. Add fried onions, salt and combine well. Add water and cover the dish till it comes to a boil. Add sliced lemon, green chillies and chopped coriander. Stir and cover and cook on medium flame till the water dries up. Heat a small piece of coal. Once the water dries up in the rice add soaked saffron and the barbeque chicken. Place the heated coal on a silver foil and sprinkle oil on the coal. Cover and cook on low flame for 5mins.

In a small pan add one tsp oil , raisins and almonds. Roast for 5 mins or til it’s slightly golden brown. You could garnish it when you serve the barbeque chicken Pulao.
