Judge Casey’s is an old family recipe, which was made at home in Cork, Ireland since the 1950’s. In 2010, Peadar Casey brought his family recipe with him when he moved from Ireland to San Francisco. Along with his Irish friend Stephen, he started Judge Casey’s Irish country ketchup.

The company is named in honor of Peadar’s great granduncle, the famous Judge Jeremiah Casey of the bustling town of Port Costa, California. In 1873, he emigrated from Ireland to the Bay area, worked hard and became a respected judge in the Californian frontier. The Judge became a family icon and now generations later Peadar and Stephen have replicated the Judge’s journey to California and are keeping his spirit alive with their delicious country ketchup!

judge Casey’s Irish ketchup everything aketchup is and so much more when I getdown toward the end of a bottle like Iam right now I like to add a few thingsto it and make a barbecue sauce out ofit I’ve got here about a tablespoon ofsoy sauce right in there about atablespoon of symbol symbolic it’s likesriracha but the other stuff a toastedsesame oil I really like the flavorthat’s about 1 tablespoon I’m gonna putsome really good local olive oil inthere as well some Coleman’s dry mustardabout a teaspoon and some local Sonomahoney shake vigorously alright andthat’s a sauce now this judge Casey’sbarbecue sauce that we just made isgreat with all kinds of things but Ithink especially chicken wings saltthese up real nice and move them aroundI’m gonna put a little bit of sugar onthem and that’s going to promote thenice dark caramelization I’ve got somepaprika yeah paprika cuz that’s nicealmost some of this fantastic olive oilhere some of that good black pepper I’mgonna get these wings into a rippin hotpan a little bit more toasted sesame oilabout 3/4 of the way through theBrowning process of the chicken wingsI’m gonna drain off some of the fat allright we browned up our chicken wings onall sides we’re gonna get them in thisbowl and get the barbecue sauce on themat this point these chicken wings areonly about 80% cooked but the outsidesnice and caramelized and crispy andwe’ve rendered off a whole bunch ofchicken fat there and now I’m just gonnapour the sauce I’m gonna save a littlebit back give it a give that shapeooh la la already looks great I’m gonnago right back into that pan you canalready hear the sugars sticking to thebottom all right at this point I’m goingback into the hottest oven you got wehave those nice saucy caramelizedbarbecued chicken wings my mouth iswatering right now so so delicious nowthat’s a wing dang dude we got thatJudge Casey’s that we saw that we hadleftover and then I need to get my facemask Mandy because I’m salivating[Laughter]I’m Matt Templeton thank you very muchjudge Casey’s chicken wingssee you later it’s just Casey it’s justCasey’s it’s just Casey’s yeahit’s Judge Casey’s it’s judge Casey itsChuck Casey’s yeahthese wings are so good and I’ve made acomplete mess out of myself but you knowwhat you can go ahead and judge me
