This dish is quick, healthy and delicious.
SIMPLE CAJUN GRILLED CHICKEN BREAST.
This is my go to mid week dinner when i’m rushed off my feet. I normally cook in large batches and add to salads and sandwiches for lunch.
This low carb chicken breast ticks all the boxes for me. Delicious, moist, juicy, succulent chicken breast. Pan fried over a low to medium heat.
Start off with butterflying your chicken breast, cover with plastic wrap and flatten out gently.
The aim is to get the entire breast to around half and inch thick.
This will ensure it cooks evenly and doesn’t dry out.
Sprinkle generously with your Cajun spice seasoning and olive oil. Then rub the marinade into both sides of your chicken.
For best results leave to marinate over night.
Coat your pan with some olive oil and heat at a low to medium temperature. The key is to stay in complete control of the heat. Too high and your seasoning will burn and the chicken will dry up inside.
Approximately three minutes on each side is perfect.
Add some butter to the pan and baste the chicken breast, coating the top of the chicken in butter will add a depth in flavor.
Take off the heat and allow to chicken to rest for upto a minute. Then slice up into one centimetre thick slices.
I’m having this with a salad. You can serve with rice or pasta, whatever your in the mood for.
