This is a simple yet very tasty way to make your chicken wings. I really recommend getting some Greek oregano as it has 10x the flavour of the stuff you find in the supermarket. You can find it at any good deli.
1 Kg Chicken wings (you can take off the tips if you want)
Juice of 1-2 lemons approx 100mls (depends on how juicy they are)
2-3 cloves garlic crushed/ finely chopped
50ml Olive oil
1tsp Greek oregano
Mix your lemon juice, oilive oil, garlic, oregano with S&P for taste. Pour over your chicken wings and allow to marinade for at least an hour, I leave them to come to room temp so they cook more evenly. If you want to leave them marinating longer, then place them into the fridge and pull them out an hour before you cook.
Place the marinated wings onto an oven tray and spoon some of the marinade over them. Place into the grill at approx 150-160 degrees, for 40 mins. Turn them about half way through so that they brown on both sides.
Serve – I served them with baked potato/ sweet potato with rosemary. Clean and cut your normal potato into bite sized pieces (no need to remove the skin) and boil until just tender. Cut your sweet potato into the same size, toss both in a bowl with some oil (I used light olive oil), S&P and the rosemary.
Place into the oven at approx 180 degrees for 30 mins.
