Here is a very simple, quick and easy grilled chicken recipe which is full of flavours. It can be eaten on its own or a wrap can be made either with a tortilla or a puri paratha. It goes very nice with mint and coriander raita. Hope you will enjoy this oven grilled chicken recipe!
Chicken 500 grams, Onion 1, Lemon 1/2, Tomatoes 3-4, Yoghurt 2-3 tablespoon, Tamarind Sauce 1 teaspoon, Ginger and Garlic Paste 1 tablespoon, Fresh Coriander and Mint Leaves, Red Chilli Powder 1/2 teaspoon, Turmeric Powder 1/2 teaspoon, Cumin Seeds 1/2 teaspoon, Kashmiri Red Chilli Flakes 1 teaspoon, Kasuri Methi 1/2 teaspoon, Whole Coriander Seeds 1/2 teaspoon, Ajwein (Carom Seeds) 1/2 teaspoon, Garam Masala 1/2 teaspoon, Salt 1 teaspoon, Whole Black Pepper Corns 10, Vegetable or Sunflower Oil.
1)Cut chicken into cubes of about 2 inches approx. Add all the spices (crush the black pepper corns and coriander seeds), add yogurt, ginger garlic paste, lemon and fresh coriander and mint leaves. Mix together and leave to marinate for a minimum of 30 minuets.
2)Cut the onions and tomatoes into large pieces.
3)Heat the grill to 180 degrees. On a grilled tray, add the chicken and grill for approximately 15 minutes or until one side has cooked.
4)Turn the chicken over, and add a small drizzling of oil to the chicken. Add the onions and tomatoes to the tray as well and grill for another 15 minutes.
5)Check to see if chicken has completely cooked through then garnish with the remaining lemon.
