Today, I am presenting a healthy dish, namely ‘Grilled Chicken Salad’ for the special occasion of International Yoga Day. I am going to show you all the steps of grilled chicken salad recipe in details.

Ingredients:
– Chicken 250 gms
– Sweet corn 1 pc
– Yellow bell pepper 1 pc
– Red bell pepper 1 pc
– Capsicum 1 pc
– Lettuce 1 cup
– Carrot 1 pc
– Onion 1 pc
– Tomato 1pc
– Curd 1 Tbsp
– Lemon juice 30 ml
– Olive oil 2 Tbsp
– Mayonnaise 1 Tbsp
– Parsley
– Basil
– Coriander leaves
– Spring onion
– Ginger-garlic
– Black salt
– Black pepper

Method:
STEP 1 – Season the chicken breast with some salt & black pepper, and then add 1 tbsp of lemon juice & 1 tsp of olive oil. For flavour add some fresh chopped basil & Parsley leaves. Next add some grated ginger and grated garlic (2 cloves). Marinate it properly, cover with a lid and keep it in refrigerator for 15 mins.
STEP 2 – Now boil the sweet corn with some salt. Meanwhile take a pan and put 1 tsp olive oil to it and sauteed the capsicum, yellow & red bell peppers for 30 sec, after 30 sec add some Black salt and black pepper to the veggies. Put off the flame, keep the tossed veggies aside to cool down.
STEP 3 – Now let’s make the salad dressing. Take a bowl and add half tbsp of curd, half tbsp of mayonnaise, 1 tbsp olive oil, 1 tbsp lemon juice, grated garlic (2 to 3 cloves), black pepper & black salt, and whisk them properly that mayonnaise, curd, olive oil mix together. Keep the dressing in the refrigerator.
STEP 4 – Check the sweet corn, take out it once it boiled, now add chopped carrot to the same water and blanch it for 30 sec.
STEP 5 – Next take out the marinated chicken from refrigerator and grill it for 20 to 25 mins in a griller with some olive oil (a few drops). You can make it on a tawa or frying pan. Brush a little olive oil to the pan, after heating it place the marinated chicken breast on it. After 2 mins turn the piece. Repeat it for 2 times. After 10 to 15 mins the chicken will be grilled.
STEP 6 – Now take a mixing bowl and add boiled sweet corn, chopped lettuce, tossed veggies, sliced onions, blanched carrots & diced tomatoes. Mix them together and add some Black salt & black pepper. Then add the chilled salad dressing (3 tbsp) to the mixture. After that add the fresh herbs i.e. basil, parsley, coriander leaves and spring onions.
STEP 7 – Cut the Grilled chicken into small pieces. Now take a plate and make a bed of mixed veggies, then place the chicken pieces on top of it and add some dressing on the grilled chicken. That’s it your grilled chicken salad is ready to serve.
