INGREDIENTS:

– whole chicken (1 kg)
– onion paste
– ginger paste
– garlic paste
– sour yogurt
– mango jelly
– red chili powder
– cumin powder
– garam masala
– tomato sauce
– mango pickle
– turmeric powder
– sugar
– lemon juice
– soy sauce
– salt

PREPARATION PROCESS:

– cut stains on the chicken

– take a bowl (which will fit the whole chicken)
– add 3 tbsp onion paste into the bowl
– add 1 tbsp ginger paste
– add 1 tbsp garlic paste
– add 3 tbsp sour yogurt
– add 1 tbsp mango jelly
– add 1 tbsp red chili powder
– add 1 tbsp cumin powder
– add 1 tbsp garam masala
– add 1 tbsp tomato sauce
– add 1 tbsp mango pickle
– add 1/2 tsp sugar
– add 1/2 tsp lemon juice
– add 1 tbsp soy sauce
– add salt (quantitatively)
– add 1/2 tsp turmeric powder
– mix well
– add the chicken into the mixture bowl
– spread the masalas well on the whole chicken
– marinate for 3 hours
– after marination, tie the chicken legs together (it helps the chicken cook evenly)

– heat your pan
– add mustard oil (quantitatively) into the pan
– take the chicken from the bowl and remove off all the extra masalas
– then put it into the pan
– keep the masala bowl aside (we will need them again)
– first, cook the chicken for 1-2 mins each side
– then cook 10 minutes each side one by one on medium-low heat
– keep cooking and tossing the chicken again and again until the water in the pan dries out
– take a brush and the masala bowl, spread the masala on the chicken again using the brush
– but be careful not to burn the chicken while you brush
– cook well and your grill chicken will be ready in no time

Preparing Sauce from the Grill Masala:

– remove off the chicken to plate from the pan
– add the extra grill masala into the pan
– fry to 2-3 minutes
– then add 1/2 cup of water
– add 4 tbsp tomato sauce
– cook until the oily layer comes out on the top
– your sauce is ready now!
– serve hot with the grilled chicken and naan roti or paratha
– enjoy 🙂
