叉烧包 / Steamed BBQ Pork Buns (Char Siu Bao)

甜蜜蜜的馅,蓬松柔软有质感的面皮,很容易满足胃。自己家里吃,我用了最平常的中筋面粉。想要茶楼里破壳的效果,可以用低筋面粉,另外再加臭粉(一种蓬松剂)。

Steamed BBQ Pork Buns (Char Siu Bao) 叉烧包

For the dough: 面团:
— 300g all-purpose flour 中筋面粉 300克
— 150g cold water 凉水 150克
— 7g yeast 酵母 7克
— 7g baking powder 泡打粉 7克
— 1 tbsp lard 猪油 1大勺

For the filling: 馅料:
— roast prok chopped 叉烧粒 适量
— cha siu sauce 叉烧酱汁 适量
— corn starch water 芡粉水 适量
