BBQ Pork Chops Recipe – Easy Grilled Juicy Thick-Cut Chops

This recipe for BBQ pork chops is a simple way to gaurantee perfectly cooked, medium rare chops every time. You’ll also learn how to make a simple yet super tasty Apple and Raw Beet Slaw and smokey apple sauce.

Smoked BBQ Source’s Dean “Schuey” Schumann shows you how to make bbq pork chops on the charcoal grill. The key to this recipe is to set up your grill with a hot zone and a cooler zone so you can ‘reverse sear’ the chops.

Reverse sear just means you start off by cooking the pork chops at a low temperature so they gradually cook without burning on the outside. You then finish them with a quick sear so you get those perfect grill marks.

In this video we used GrillGrates, but you can still get prefectly good results on any grill.

Apple goes so well with pork so we’ll show you an easy apple sauce recipe to go on the side, plus make it a full meal and add a double helping of apple with our apple and raw beet slaw side.

?Ingredients:

Pork Chops
Salt
Black Pepper

Apple and Beet Slaw:

2 large or beets, coarsely peeled and grated.
2 green apples, cored, then cut into matchsticks then cut in half (you can peel if you prefer)
1/2 head red cabbage, very finely sliced
3 tbsp apple cider vinegar
2 tsp brown sugar
1 tbsp dijon mustard
1/4 cup extra-virgin olive oil
1/2 cup fresh parsley, finely chopped
1 tsp kosher salt
1/2 tsp freshly ground black peppercorns
1 lemon (for zest and juice for serving)

Apple Sauce:

4 cups of peeled, sliced apples – Granny Smith
3 tbsp brown sugar
¼ tsp of cinnamon
1 tbsp maple syrup
zest off one lemon and juice of half a lemon
