Geoff the Chef demonstrates how to make the best Chinese Barbecue Pork – Char Siu style on the Kamado Joe – with a few twists!
This sticky, sweet, salty pork is sure to to impress! So more-ish! You’ll definitely be making this again and again!
Marinade recipe (ensure to leave some reserved for basting):
¼ cup hoisin sauce
¼ cup brown sugar
¼ cup Chinese cooking wine
¼ cup honey
4 tbsp light soy sauce
2 tbsp oyster sauce
½ tsp Chinese 5-spice powder
1 tsp sesame oil
3 garlic cloves, minced
½ cup beetroot puree
2 tsp smoked paprika
½ tsp cracked pepper
2 tbsp Kecap Manis
2 tbsp Gochujang red pepper
paste
1 tbsp butter
Marinade overnight!
Pork: Use shoulder or neck. You need a slow cook style Pork for this. You could use loin, but it does tend to dry out a little bit. If you choose to use loin, cook it only to 68C to carry over to 71C while resting.
