How to Make Vegan Barbecue Pulled Pork

Hi Friends! I never ate pork so I hope this title isn’t misleading lol, but this is my recipe for vegan barbecue jackfruit, aka vegan barbecue pulled chicken aka vegan barbecue sandwich. It is a perfect summer recipe, especially for the family barbecue. The jackfruit is uniquely textured to remind you of meat, and the barbecue sauce pairs perfectly with the creamy delicious chipotle sauce. This is a LARGE batch recipe using two packages so if you’re cooking for just your family you may want to half the recipe. I hope you enjoy!

Recipe:
2 large packages of jackfruit, preferably not in brine (available on amazon and thrive market, and some grocery stores)
2 tbsp onion powder
2 tbsp garlic powder
1 tsp cayenne
1 tbsp chili powder
salt and pepper to taste
liquid smoke to taste (about 20 dashes)
1 cup (plus more for drizzling) barbecue sauce, I used Sweet Baby Ray’s
*substitute sugar free BBQ sauce if you’re diabetic and watching sugar intake
whole wheat bun to serve

Sauce
1 cup vegan mayo
2 tbsp chipotle hot sauce
1 tbsp dijon mustard
1 tsp garlic powder
salt and pepper to taste
