HOW TO MAKE PORK BELLY BURNT ENDS
______________________________________________________________

WHAT YOU WILL NEED:
– 3-4lbs of Pork Belly
– Oil or hot sauce as binder
– Postal Barbecue Rub – Email: postalbarbecue@gmail.com for purchase
– BBQ Sauce
– Butter
– Apple Cider vinegar

STEP #1
To prepare your Pork Belly Burnt ends, begin by cubing your pork belly into 1.5-2 inch cubes. Next, apply your hotsauce to the outside of the pork belly followed by your BBQ rub. Once this has been done, get your grill set up for cooking at 225F and add in your favourite hardwood for smoking.

SETP #2
With your grill up to 225F, place your pork belly into the grill and begin to smoke them for 2-3 hours or until the outside of the pork belly has a nice bark. Once bark has formed nicely, remove the pork belly burnt ends from the grill and place them into a sauce pan to begin braising. In your sauce pan add in your pork belly, 1/4 cup of butter, BBQ Sauce and a little bit of apple cider vinegar. Mix everything around then cover with foil and place back on to the grill this time bumping up the tempreture to 250F.

STEP #3
After another 1 hour and 45 minutes of cooking in our braising sauce, our pork belly burnt ends have become as tender as we want them (around 200-205F). With them done, remove the foil, give them a mix and continue cooking them for an additional 5-10 minutes to allow the sauce to set up a bit. Once that’s done, remove them from the heat, and enjoy!
