Recreating Tim Ho Wan’s Barbecue Pork Buns (cooking vlog)

I wanted to make something for the New Year, so I tried to replicate Tim Ho Wan’s Michelin-starred Pork Buns (ofc I failed LMAO). It wasn’t perfect, but it really was not that bad given that I was just a first-timer ? The filling was surprisingly good too. I followed pepper.ph’s recipe, but I just have a few things I wanna change if I would ever do this again. Patience really is the key to making bread ?

Here’s my (tweaked) recipe for the pork buns:

For the filling:
3 cups pork belly
2 tbsp soy sauce
2 tbsp hoisin sauce
2 tbsp oyster sauce
2 tbsp brown sugar
1/2 cup water
1/4 cup water + 1 tbsp cornstarch

For the topping:
100g butter
120g sugar
120g flour
2 eggs

For the dough:
1 tsp yeast
1 tsp white sugar
1/2 cup + 2 tbsp full cream milk (156ml)
2 cups bread flour (250g)
1 tbsp white sugar
1 egg
1/2 tsp salt
2 tbsp butter, softened (28g)

Instructions are as indicated in the video. Make sure to cook the filling until REALLY thick, spoon more filling in the dough, and roll them in even thickness! Recipe yields around 16 pork buns.

Serve warm! ?
