helloi’m mr polk and welcome to my kitchentoday i’d like to show you how to makebarbecue saucefor making the sauce we’re going tostart with taking our saucepanand putting in about four slices ofbacon and we’re just going to go aheadandslowly cook the bacon and what we reallywant to do here is let the fat renderout because that’s going to becomepart of our sauce so we’re going toslowly cook this and let thefat renderonce the bacon begins to render then i’mgoing to add the onionsand it’s about two ounces of a smalldiced sweet onioni’m going to bring that around and i’mjust going to let that all sort of worktogetherand let the bacon continue to cook alittle bit let the onionsuh start to to sweat and softenthat’s what’s really gonna build thebase flavor profile for our sauceso now we’ve got things starting to lookreally good in there really getting alot of flavor out of the baconwe’re now going to add two cloves ofgarlic that are minced upwe’re just going to do that really quickand you’re going to notice that there’sa lot of bits on the bottom of the panand that’s really what’s going to createthe flavor and once you put the garlicin tooyou can really smell the aromaticscoming out of that we’re going to nextadd in the ketchupand the ketchup’s going to kind of workas a deglazing agent almostbecause you’re going to use this nowstir it all upokay keep the the bacon fat in thereand now as you start to stir try to makesure that you’re scrapingthe bottom of this pan and all of thosebitsthat were down in there from the baconare now being released by the ketchupand as i as i scrape you can almost sortof seehow clean the bottom of the pan isversus how it lookedjust a few seconds ago and that’s wherewe’re really getting that flavor basefor our barbecue saucejust going to keep stirring that in andwe want to get this back to a simmeronce your ketchup in ketchup is in it’snow time to go with the sweetsin this barbecue sauce we try to balanceout that sweet and that tangyso to start with our sweets we startwith our brown sugarabout a half cup of brown sugar we’regoing to stir that inthen we’re going to do a third cupof a molasses and the molasses once thatgoes inthat’s what really makes the barbecuesauce look like barbecue sauce and notjustketchup onions and bacon because itstarts to give itthat deeper barbecue sauce color andthen we’ll finish offwith the quarter cup of honey and againthis is just a base recipe you’re abletoadjust it however you see fitand then once you get your sweets in nowit’s time to put inwhat’s going to kind of give it thatkick okayso one of the things that we usuallyhave in a sauce like thisis you’re going to get that kick fromthe cider vinegarokay another quarter cup of thatquarter cup of the worcestershirewe put that in mixthat aroundand then the last thing we’re going todo is we’re going to put a little bit ofliquid smokeabout a teaspoon and then we’re going toput in2 tablespoons of a dijon mustardand that’s going to finish off yourbarbecue sauceas soon as you got everything mixed inyou’re just going to continueto bring it to a simmer and once itsimmersyou’re going to simply just let itsimmer very slightlyuntil the sauce starts to thicken to theway that you want itand then you’re ready to go so there youcan seehow to make the base recipe of abarbecue saucestarts out with rendering of the baconthe onionsthe garlic and then you use the ketchupalmost as a deglaze to bring all thoseflavors into itthen you throw in your sweets and thenyou balance it outwith the the more savories of theworcestershire saucethe liquid smoke and the cider vinegarand againtaste adjust make it your own recipethank you for cooking with me today andi can’t wait to cook with you real soonright hereat mr polk’s kitchen it’s
