– 300 g ketchup
– 60 ml white wine vinegar
– 75 g dark brown sugar
– 40 g molasses
– 75 g honey
– 2 tbsp vegetable oil
– 20 g tamarind paste
– 1 tsp mustard
– 1 tbsp sweet smoked paprika
– 1 tsp black pepper
Dissolve the mustard in the oil and the vinegar then add brown sugar and emulsify the liquids. When its boiling add tamarind paste and molasses and cook it until it forms a bubbly foam.
Stir in ketchup, honey, smoked paprika and black pepper. Bring to the boil and remove from the heat immediately.
Let it sit for 24 hours before consuming.
For an extra kick, add hot smoked paprika instead of sweet.
