Chicken thighs or leg
Homemade barbecue sauce
1) Marinate chicken overnight in the fridge with some of the sauce, reserve some sauce for basting and put chicken in a large bowl covered.
2) Preheat oven to 400F.
3) Place chicken in a large baking casserole and cover with foil.
4) Bake for 1:45-2hrs or until the chicken reaches a cooked internal temperature of 82C.
5) Remove casserole from oven. Preheat grill for about 10-15 mins to 400F. Grill chicken and baste with sauce on both sides. Serve hot.
