Needed an appetizer the other night so I decided to look at the Food Network stars for inspiration. I found this great recipe from Valerie Bertinelli and it was a hit with the family. Simple but so flavorful. I was even able to use the BBQ sauce for something else.
Cherry Cola BBQ Sauce
1 1/2 tbs Bacon Drippings
1 small red onion chopped (about 1 cup)
2 garlic cloves chopped
1/2 tsp Kosher salt
1/2 tsp garlic powder
1/4 tsp Mustard powder
2 cups Cherry Cola
1/2 cup red wine vinegar
1 cup Ketchup
Heat bacon drippings over med-high heat, add chopped onions. Cook for about 5 min stirring occasionally. Add chopped garlic and cook stirring often for 1 minute.
Stir in the garlic powder, salt, and mustard powder. Stir and cook for about 2 minutes.
Whisk in the cherry cola and vinegar. Cook stirring often for 2 minutes. Stir in the Ketchup.
Bring to boil and cook until reduced to about 2 cups. About 12-15 minutes.
Shrimp
16 extra-lg shrimp, peeled, deveined and tails removed.
1 jalapeno sliced (16 slices)
Kosher Salt
Pepper
8 bacon slices cut in 1/2 lengthwise
Heat cast iron grill pan over med heat. Cut slit in inner curve of shrimp; insert 1 slice jalapeno. Sprinkle with salt and pepper to taste. Wrap with slice of bacon.
Place bacon wrapped shrimp on grill pan. Turning often to crisp bacon and cook shrimp. About 6-8 minutes
Serve Shrimp with BBQ Sauce
