How to Make Meatloaf with Ground Turkey | Lake Havasu, AZ

How to make a turkey meatloaf inside an iron skillet inside the hot coals of the campfire while also searing sweet potato cakes on top of the fire. I had to switch cooking the cakes from the grill grates to another iron skillet because of a mistake I made but they turned out great all the same. Ingredients:
1lb ground turkey
1/4c bread crumbs (gluten free for me)
1 whole egg
s&p to taste
4 sweet potatoes
1/4c flour (gluten free for me again) and a little more for rolling the patties in
2T butter
2T oil

Directions:

Get the campfire going, when the wood has burned down to red hot coals its ready for the meatloaf. Mix the turkey, bread crumbs, egg and s&p in a bowl then mold it into an iron skillet ( I use an 8in) and rap in foil tightly. Steam the potatoes in the microwave for 9 minutes then mash in a bowl ( I use a robo coupe ) then add the flour, butter and s&p. You can also add some pumpkin spice for more of a festive flavor profile if preferred. Put some flour on the counter and form your cakes into 4oz patties adding flour to the outside to assure binding. Add the meatloaf to the hot coals moving it from time to time to get even cooking on all sides ( I messed this up) which should take about 15-20 minutes checking it around 10-12 minutes. Put your second skillet over the flames of the fire and add oil, add logs to reheat if needed, bring heat to medium high. Put the cakes in the pan ( I use a 12in) leaving room to maneuver the spatula between them. Cook for 3-4 minutes on each side and at this time you can remove the meatloaf and let rest.
