How to Smoke a Turkey Breast (HOT and FAST)

Changing your plans this year for Thanksgiving or just want to do something on a smaller scale? Smoking a turkey breast is a killer way to still cook an awesome meal without having to smoke or roast or fry and entire turkey. Smoking a breast is easy and delicious, slice it thick and make sandwiches, dice it up make tacos, refrigerate it and slice it then for deli sandwiches.

Recipe:

1 boneless skin on turkey breast ( about 3 pounds ). Try to get one that is in the netting, it helps keep the shape. I found this one at Aldi.

Atlantic spice company Maple Bourbon Rub (this pairs really well with the pecan wood)

Dust the rub liberally on the turkey and let sit for a few min prior to placing on your smoker. Once your smoker is up to temp, for hot and fast you want around 300-325. Throw a chunk of pecan wood on the coals and get that smoke rolling. If you are using a kettle style grill, set up your coals all on one side and light just the middle so it spreads throughout the cook. Place the turkey breast on the far opposite side as the coals. During the cook if you done have a wired probe you’ll want to check the temperature with a instant read thermometer to make sure you don’t dry out the turkey. You want to aim for 158-161 degrees internally before you pull the turkey of to rest. This should take 1.5 to 2 hours, then let it rest wrapped in foil for another 10-15 min.
