[Music]all right what’s going on out thereeveryone that’s cooped up in your homesso we are gonna make some ribs and thenwe’re gonna do a little Boston shoulderstyle but we’re gonna make drive-thrubarbecue sauce so we’re gonna take allof our barbecue sauces all of our littlethings that we’ve gotten from all thedrive-throughs and everything we’regonna sort through this and see what wegot we’ve got chili sauce from Wendy’sthere’s soy saucethere’s water burger spicy ketchup rightwe got Taco Bell fire sauce so we’regonna make a barbecue sauce twodifferent styles so we’re gonna flavorthem a little bit different on both ofthese and stay tuned for more all rightso we are doing our Boston pork shoulderand our st. louis-style ribs all rightso we’ve got it all divvied up and thenwe’re coming down so what we’re makinghere is drive-thru barbecue sauces so inour house we have our little red wagonlittle flyer and we put all of our extracondiments and things like that in ourhousehold so in this time when you’retrying to figure out get good spices andseasoning they’re given to you for freeright so if we could save money let’s doit right here so check it out we’regonna make two different flavor profileshere so we’re starting now we’ve gotjust our basic ketchup right so all andthen Whataburger spicy ketchup bomb.combest ketchup on the world in the worldand then we’ve got pancake syrup rightand then we’ve got a zesty horseradishsauce from Burger King for our onionrings that they like to give outwe’ve got Wendy’s barbecue sauce andthen all of our taco bell spices rightwe’ve got all those laid out crushed redpepperpicante sauce and then we’ve got all ofour Chinese food sauces so we’ve got ourspicy mustard our duck sauce the soysauce boom these are my favorite righthereWendy’s hot chili sauce so we’re gonnause that that is gonna make awesomeawesome sauce right there so that we’vegot our B sauce and then coming overhere we’ve got our seasonings this isthe special right here this is thegoods the good stuff right so we’regonna do this in a couple differentflavor profiles where one’s gonna bemore of a barbecue and the other one’sgonna be a little bit more like spicedup version right so we’re gonna do onethat’s kind of sweet and savory and theother that’s spicy and nasty alright sowe’ve got our chili powder our limepepper and then the one with that we’regonna do the syrup on so I’m gonna add alittle bit of coffee grounds to that butI usually like to do when I sauce firststart out by marinating these with we’lldo one with the pancake syrup and we’regonna do one with mustard and the zestysauce so we’re gonna coat them in thatright and then we’re gonna season themput them on the smoker and then we’regonna divvy these up and make twodifferent sauces and right before themeats about to come off we’re gonnasauce it with everything that you seehere so stay tuned to the next segmentwe’ll see you then all rightdrive-through barbecue drive-thru sauceright we have talked about it hey I justwanted to show you guys something injust a little quick tip so first off Ilike to keep one glove on my hand andthe other one with paper towels and whenwe have our ribs I like to take thislittle membrane off so it usually worksbest if you take your paper towel andyou’re just kind of drying everything upreal good and then you you’re able tokind of work it that with the papertowel on the skin and generally if allgoesit comes up real easy because you grabit with that paper towel and you work itloose and then kind of seen when I’mgetting my fingers under there right soyou want to work that all the way looseoff the backsides of those bones andwhen you grip it with the paper towel Ihave found that it makes it a lot easierjust to grab it if you can get it in onebig fail swoop then good job it’s notyou just gonna go back and trim it up alittle bit so I keep pulling this we’regonna get down to this edge I’m gonnaget another grip with mine alright so wedo that so that we get good seasoningthrough the meat because nothing’s gonnaget through that little membrane rightthere so stay tuned we’ll be back injust a second I’m gonna do the otherribs and then we’re gonna start to doour outer sauce all right we’re back soI’ve got both of these trimmed up theylook really nice I’m gonna go ahead anddo our zesty horseradish dipping this isour Burger King sauce that they use ontheir fried onion rings and I’m gonnause our spicy mustard so these are thetwo that we’re just using for our outerrub and so we’re gonna take and get tocutting and putting the spicy stuff on alittle bit all of it so I’m gonna justdo one packet on each side and smear itaround so we’ll do one package of ourzesty saucethere’s somebody out there going oh mygod he should not be doing that andwe’re like it’s possible but we’re gonnacook this and cook this and cook thisand then we’re gonna cook it some moreso I’m just gonna get all of this out ofhere so this is has a horseradish phasedistilled vinegar so I read all theingredients on the outside to make surethat we were safe and there wasn’tanything crazy in here all right so nowI’m gonna rub all this around rub thelove get it all spread around there I’mgonna do the other side make sure I getsome over here all right flip them onthe other side BAMtake two and we’re gonna do it againwith our spicy mustard do some on ourshoulder and down our ribs come on getup there you go down here’s our BurgerKing sauceI usually only grab the meat stuff withmy gloved hand but since I want to getall this sauce out of here I’m justusing my fingerso we want to keep this flavor profile alittle bit on the spicy side so this isthe one that we’re gonna be doing withour chili oil chili seasoning we’regonna keep this one a lot spicier thanour other one so make sure I get allthis rubbed around everywhere whoo givea little bit more finish in there makesure rub it at all around it’s just notone pile right on anything so now ourseasoning is gonna have a binder it’sgonna have something to stick toso everything now the seasonings gonnastick to that boom all right well let meraise my hand up and I’ll see you on thenext set all right we’re back now we’regoing for there other flavor profiles soover here we’ve got the spicy mustardwe’ve got the zesty sauce which haslemonit has horseradish blind juice sothey’re a little bit zest to yourseasonings over here this is pancakesand you know usually I would use justregular oldworks well but this is jack-in-the-boxservice thank you jack in the box forhelping a spice our food so money isjust one on each side it’s messy andsticky it’s fun no all right so we’reback we’re doing another our otherjack-in-the-box syrup we’re going to dothis across the ribs[Music]Tuesday so this is the one that I’mgonna be doing with a little coffeegrounds little brown sugar and we’regonna keep this on a little bit moretraditional barbecue sauce flavor sowith this one I’m probably going to beusing more of the ketchups and thebarbecue sauces from all of ourrestaurants[Music]flip this bad boy this wayall right so now we’ve got I hop[Music]so we wanted all nice and sticky so allof that seasoning sticks to our meatright we get a nice crust of smoked[Music]all the sides are left in here alrightnow we’re gonna do our last oneso there is this out good stuff soalright well stay tuned and when I comeback we’re gonna season we’re going totalk about seasoning so we’ll see in asecond alright we’re back so the firstone I’m doing is our syrup right so wehave our pancake syrup fromjack-in-the-box and IHOP’shere tall over here so this one I’mgonna do just a little bit of coffeegrounds oh very goodso doesn’t take a lot of just a littlebit I always like to sprinkle thingsfrom up high so that we get a nice evencoverage that’s what I like to do itover the sink so become pretty I kind ofdoubt that was[Music]oh all right so then after that I’mgonna do some brown sugar[Music]this is gonna be sweet and spicy rightit’s gonna have more of our traditionalketchup barbecue sauce flavor or ourother one we’re going for a lot hottermuy caliente right this is just good oldwestern barbecue flavor right herelittle southern sweet spicy[Music][Music]down[Music]this is definitely gonna be sweet andthen I want to finish it with our Adkinsactual barbecue sauce right so that’sjust a rub that I like to use it worksgood on the port it’s always good[Music]one last time[Music]nice heavy I like to do[Music]all right and we’ll see you on the nextstep we do the horseradish and spicymustardall right we’re back so now we have ourspicy mustard horseradish little limejuice vinegar of the apple cider vinegarso for this one we’re gonna make thislittle spicy so this is one of myfavorite spices special right right sowe’re gonna sprinkle this like I saidalways kind of go for my pies so thatyou get a nice even 3d coverage when youcan when it’s shaking out good shakeshake shake shake shake all right andthen I’m gonna add since I know I’ve gotlemon and lime juice in here I’d lovethis stuff this is lying pepperit helps that you grab the one that’show much I like but I have multiplecontainersall right and then the last when I addjust a little bit of chili powder not alot just a little bit of chili powderJustinall right now I’m gonna flipkind of had that in there make sure itsticks[Music]more time again my favorite thing if youcan pick this up in your local store[Music]this is gonna be kind of a zesty tangyspicy[Music]all right boom now see us outside moreput it on the smoker we’ll see you therealright we’re outsidelike right so we’ve got our syrup glazedit’s a little bit more spicy than ourtangy mustard[Music]step back[Music]I’m gonna go ahead and pull out so whatI’m gonna do is set set them on eachside spill Oh have their own individualour first ribskeeping them on the right side so thatway all my juices that goes down[Music]or spicy mustard[Music][Music]so we’re gonna do this at 275[Music]we’refour hours three hours on the ribs we’regonna pull them off so we’ll be backhere in just a little bit so gonna pullthe ribs off next let the pork shouldersit in there for a little bit longer andthen we’re gonna make our Nyx’s adrive-through BBQ sauce and it’s gonnabe messy all right so now we’re backinsideso I’ve divvied up all of our sauces allright so here’s what we’re doingready – so for the spicy one right thespicy ones the one that has the thesweets underneath and the coffee and thebrown sugar we’re gonna take that oneand put it with our sweet chili sauce ora barbie sauce ketchup traditionalbarbecue sauce and the best ketchup onthe planet Whataburger ketchup helloand then I took and split it up so bothsides are gonna get some soy sauce alittle bit of duck sauce so all of thatis gonna be a kind of a little bit oftraditional style barbecue except thatthis chili sauce from Wendy’s is thebomb by the way that is really gonnamake that bounce against that sweet andall that syrup right and the coffee andthen on the flip side we have our spicymustard with a little zesty blend that’son there so we’re gonna take all of ourtaco bell seasoning mix all thosetogether with our picante sauce we’regonna use the water burgers spicyketchup yesI’m splitting water burger between twosmokes here because that’swe roll so I’m also gonna do the soysauce there and then our moretraditional ketchup so now it’s time toopen the packets and make the sauce allright so we’ll see you when we’re readyto pull the meat off and then we’regonna sauce it all right so we’re gonnahave the packet board all right so whocan empty all their packets into theirbowls Zephyr or and the lid all rightso Andy you got to pick up the twopackets we’ve got all of our Barbies andWhataburger and Wendy’s over here andthen Zephyr you’ve got Taco Bell picantesauce spicy whatever good ketchup soAnnie why did you pick the ones you did[Music]okay all right are we ready for thepacket challenge let’s do itthree two one gooh you can’t put the plastic part in thein the sauce that’s no good[Music]discard ball yeah yeah we’ll put it inhere in between the two[Music]all right we’re back so now I have fullribs and shoulder off don’t forget overhere in the copper pan this is thepancake syrup from jack-in-the-box andthe pancake syrup from IHOP with alittle bit of coffee grounds a littlebit of brown sugar and Atkins seasoningand then over here on this side right wehave the Burger King zesty dressing fortheir fried onion rings which consistsof horseradish little vinegar Jean andsoybean and so we’ve gotten that goingnow the weave that’s our smoke so nowwhat we’re gonna go ahead and do issauce them so we’re gonna take oursauces so this sauce ended up being whatwe’re doing with the the pancake syrupright we are doing the RV sauce justtraditional RV sauce with the Wendy’schili sauce right so this is like it’sjust bounces back and forth and it’sawesome I love it and then there’s moreketchup there’s a little bit of soysauce in herebut mostly this is a little bit more ofa traditional sauce all right now comingover here this is our sauce that isawesome ketchup but it’s one of ourspicy ketchup we love that and it hasall of our taco bells so it has the tacobell all of the fires spicy ones inthere and picante sauce so we’re goingto go ahead and sauce these up I’m goingto go aheadon the foil wrap them up let a marinateovernight right I’m about to throw you alittle curveball here because I’vepulled them off I’m gonna go ahead andsauce them wrap them and we’re gonna letthem sit in the refrigerator overnightand we’re gonna put them in the pressurecooker tomorrow and they’re gonna belike man that’s good Wowall right so we’ll see you manana we’reback it’s the next day so our meat sackin the marinade in our barbecue sauceall night long so we can get a littlebit of that murder day the dummy so nowI’ve pulled it up put it in the oven at300 degrees for about an hour and a halfI’m gonna let these shoulders go just alittle bit oh my gosh they’re justfalling apart so I’m gonna grab it athird pan I’m gonna move this over here[Music]all right so now I’m gonna mark her soI’m going to take a little bit of saucehere and put right here so I know thatthat is my Arby’s and chili sauce oneright here is gonna put this back[Music]now we are gonna unwrap some rib jobcheck this out lettuce they’re justfalling apart so I’m gonna chop these uplet’s go ahead and open these other onesthat this is our Taco Bell picante lookat that you know they’re getting donewhen they’ve worked when that starts topull back off the meat man these aregonna be some bomb.com ribs so I’m gonnaslice these up we’re gonna segment themout into different boxes for differentpeople that we’re gonna say do you likea box for me boxdo you like the Tex Mex ribs littlespicy fiesta seasoning or do you likethe whole sweet south right so in
