BBQ Pork and Ginger Meatballs with Bok Choy | The Prepared Pantry #5

A quick, weeknight meal for two that’s as satisfying as it is easy to bring together using a surprisingly versatile ingredient: bok choy.

Ingredients:
10-12 Oz Ground Pork or Pork Sausage
1/2 Cup Rice
2 Radishes, halved and thinly sliced
2 Bunches Baby Bok Choy, separated and roughly chopped
1 1-inch piece Ginger, peeled and finely chopped
1/4 Cup Panko Breadcrumbs
1 Tbsp Rice Vinegar
1/4 Cup Barbecue Sauce
2 Tbsp Soy or Teriyaki Glaze or Sauce

For a Quick 1/4 Cup BBQ Sauce, whisk together:
2 Tbsp Ketchup
1 Tbsp Molasses
1 Tbsp Cider Vinegar
1 Dash Worcestershire Sauce
1 Dash Soy Sauce
Seasoning(s) of your choice

Method:
1) In a small pot, combine the rice, 3/4 cup of water and a pinch of salt. Bring to a boil then reduce heat to low. Cover and continue to cook without stirring, about 15 minutes or until tender and the water has been absorbed. Fluff with a fork, then cover and set aside.
2) While the rice is cooking, add the vinegar to a small bowl with the sliced radishes; season with salt and pepper and set aside to marinate for at least 10 minutes.
3) In a small bowl, combine the barbecue sauce, soy glaze, and 2 tablespoons of water.
3) In a large bowl, combine the pork, breadcrumbs, and chopped ginger, and season with salt and pepper. Mix gently to combine, trying not to squish the meat too tightly. Form into ten small meatballs.
4) Heat a tbsp of oil on medium high in a large pan or pot. Add the meatballs in an even layer and cook, shaking and turning occasionally for about 8 minutes or until browned
5) Push the meatballs to one side of the pan and add the bok choy stems to the other side. Season with salt and pepper and cook, stirring occasionally for 2 or 3 minutes, or until slightly softened.
6) Add the glaze and continue to cook, stirring constantly for an additional 1 to 2 minutes or until well coated and the meatballs are cooked through (160 F).
7) Turn off the heat and add the bok choy leaves, stirring until wilted.
8) Serve over the rice and topped with the marinated radishes.
