Easy pan-grilled chicken

This is a simple way to make delicious chicken for other recipes. I’ve sliced it and put it in salads, sandwiches, and wraps. I’ve also served a whole piece with fries or rice and a salad.

Ingredients:
2-3 boneless skinless chicken breasts
olive oil
salt
dried Italian herbs*
mild paprika*

* You can replace the Italian herbs and paprika with a Thai-spice blend or Chinese-spice blend and add the chicken to a stir-fry.

Instructions:
Preheat a heavy pan over medium heat.

In a bowl, drizzle the chicken with olive oil, then sprinkle with salt, Italian herbs and paprika. Turn several times to coat thoroughly.

Turn the heat to medium-low and add the chicken. The time to cook depends on the thickness of the chicken. If the chicken is browning too fast on the bottom and the top looks raw, lower your heat some more. When the edges around the top are no longer pink, turn the chicken over, either with tongs or two spatulas.

When the chicken is cooked, remove it to a plate and let it rest a few minutes before slicing.

Take the pan off the heat, stand back, and add vinegar to the pan while it’s still hot. This will keep the bits from getting stuck to the pan and make cleaning easier. Once the pan is completely cooled, wash it with a sponge, dish soap, and warm water.

For best results, slice the chicken on a cutting board.
