This is how to bbq porkchops right! There are many ways to cook a chop, but you have to try this way out to really appreciate it.
All we did was brine 6 1″ thick, center-cut pork chops in sweetwater Spice BBQ Bath. It has some great Apple Chipotle flavors and keeps the chops nice and tender. Next we put some Meat Church Holy Gospel and Honey Hog BBQ rub on for flavor. (don’t forget we used some Plowboys Yardbird Rub on a couple!).
Next we fired up the PK360 hand poured cast aluminum grill with Fogo Super Premium lump charcoal. Once it got over 400 degrees, we seared the chops for 2.5 minutes, turned, 2.5 more minutes and repeated on the other side until the internal temp was reading 135 on the Thermoworks MK4 thermometer. We then added some Elk Creek Country Style BBQ Sauce for some sweet BBQ flavor. After a short rest we served them up with some mashed potatoes and veggies. FANTASTIC!
