Deer Backstrap vs Beef Tenderloin Grilled on the Lodge Cast Iron Square Gill Pan

Which is better Venison or Beef? This is a head-to-head blind taste test of grilled venison backstrap vs grill beef tenderloin. Finally put to rest with the best beef cut up against what most consider to be the best cut on the deer… backstrap. This recipe also limits the spices and flavors so that the real star of the show is the grilled meat. We also use a great Japanese beef dipping sauce called Gyu Tare and show how together this great beef sauce.
All of this is a part of our indoor grilling series featuring great cast iron cooking recipes and helping to bring the grilling indoors when the weather outside isn’t cooperating with your culinary cravings.
We also selected an induction cooktop to doe this cast iron cooking on just to mix things up a little bit. Not everyone has access to a flame cooking surface when it comes to grilling and cooking with cast iron indoors.

get startedwe’ll be putting these head-to-head as apart of our indoor grilling series youlook right here it’ll be a playlist ofthe other videos that we put into thisseries the weather outside is cold rainyit’s time to bring some of the grillingindoors we’re also going to be coveringa couple of the topics that you mightfind interesting we’re gonna be cookingthis on an induction cooktopin a lodge cast iron square grill panand we’re going to be limiting theingredients for this basically down thesalt and pepper this hunting season I’vealso been experimenting with a Japaneseand I’m gonna struggle to say this youtear sauce which is a Japanese beefdipping sauce this is how you actuallypronounce it according to Google so thisbackstrap has not been frozen it camefrom a younger deer so it’s going to bemuch more tender than some of the olderdeer that we’ve gotten this season andthis is just a run-of-the-mill what youwould pick up in the grocery store touchon the expensive side we’ll go ahead andget that meat prepared[Music][Music][Music]so now that we’ve got that venisonbackstrap prepped up we’ll go ahead anddo the cooks side by side same spicessame temperature in the same pan we’vegot that pan smoking hot so go ahead andstart the cooking I’ve got a feelingthat this back strap is gonna cook a lotquicker than this tenderloin because ofthe the beef tenderloin is so muchthicker of the cut so we’ll go ahead andwe’ll cook them appropriatelyespecially with venison I never want toget the interior above 120 degreesthat’s one of the problems with cookingvenison is most people overcook it[Music][Music]let’s hope I didn’t overcook thatvenison I did have to pull it off andnow we’ll let that sit and restyou always take that meat off let itrest the meat relaxes that juices settleout stays in the meat that’s criticalwhen you’re cutting and slicing andpreparing there’s a well rested me thosejuices stay in if you don’t want to runit all over the place this is such anincredibly easy cook with these twomeats in the side-by-side test thisshould be interesting to see what myfamily thinks of the different tastebetween the two meats and thattenderloin was twenty dollars a poundI got it on sale a little bit cheaperthan that but some would say that thatvenison is more like $100 a pounddepending on how much you spend in thehunting woods now the way this is cut iscritical as well so in this venisonobviously the grains run this way wewant to cut this at an angle chefsprivilege against the grain[Applause][Music]now I can tell you I’m going to have totell them to keep their eyes closedbecause my family will certainly see thedifference between these two and maybeyou can taste the difference veryquickly so I’m gonna have them have toask them when I say blind literallytheir eyes are going to have to beclosed in order for this to not beeasily immediately identified asmedicine versus tenderloin beeftenderloin now we’ll get that you carrysauce with that in the middle for thedipping and we’ll go from therethere’s the sauce nice and chilled downthickened up some really simple sauce tomake quarter cup of soy sauce quartercup of mirin and just to show you realquick what that is sometimes this can bea little bit tougher to find in yourgrocery store in the Asian section butthat’s what that is rice vinegar eighthof a cup and my favorite part quartercup of sake and you know what a littlebit more for the chefso let that simmer for a bit once itsimmers pour it off into anothercontainer put it into the fridge to cooldown that sauce get served cold fordipping the beef and the venison into[Music]this is obviously venison I know that’swhy they’re gonna call it a blind tastetestthis is taste of meat and I’ll feed youone then I’ll feed you too and youremember the flavors in texture I’m outthis watering and you decide which oneyou like betterthis isn’t and can you guess the meetingthis is a and which one tastes better noguessing the meatVinnygoodabsolutely
