[Music]welcome back I’m Vanessa and today Iwanted to share with you a dish that Ilearned here in Thailand being underquarantine you have a lot of time onyour hands so I wanted to put together adish that was fairly simple it’ssomething that is very popular with anortheaster and Thai and it’s somethingthat I really enjoy eating because youcan either have it with rice with saladwith vegetables but for today we’reactually going to help out with rice andsome vegetables so I wanted to showcaseof what ingredients we’re going to beusing today for the crank Tiger which isalso known as so oblong high we’re goingto use this fabulous cut of meat whichis beef ribeye so I got this at thelocal supermarket as you can see herethey’re roughly about half a pound eachpiece of meat and we’re going to bemaking a dipping sauce for crying tigeras welland bring that sauce we are going to beusing waster sauce fish sauce can Itaste you can also use tamarindconcentrate which is the same thing youcan use tamper and pull but thatactually comes within the actualtamarind fruit itself so for the saucetypically don’t want to use tamarindconcentrate or tamarind paste which isalready white sugar I’m going to roastsome rice so typically for the dippingsauce for crank Tiger you can useglutinous rice I didn’t have any on handso I made some rice and I’m just goingto use some white jasmine rice whichshould be the same thing and here forthe dry spices and we have red chilipepper flakes and ground black pepperand I mentioned some vegetables so wehave here cilantro which that’s going togo into the dipping sauce because no Ilove my spice suited people in Thailandand which is why I love their cuisine sowe’re gonna add in at each other coversof the onion we’re gonna chop up someshallots for the sauce and the lemonjuice to give it that acidic taste thesedreamy long beans we’re going to chop upand we’re actually going to wrap thatwithin these cabbage leaves here andthat’s going to be critical planetaryweek often times we go to restaurantsyou can see crimetracker whether anentree or an appetizer if it’s anappetizer forum it’s typically with asalad so it’s also known as beef saladand then if it’s an entree you’ll see itwith the assortment of cabbage of thestring beans and then you’ll also see itwith rice or with sticky rice so I’venoticed that here in Thailand peoplewant to eat their proteins with eithersticky rice or regular jasmine rice so Ithink it’s just a preference thing Ilike to go either way it just depends onmy mood I do find that the sticky ricealong with the protein the balances offlavors off one another because of riceyou can sort of grab it and just eat itwith your hands if you want and thenwith the jasmine rice you can’t go wrongwith that alright so we’re going to getstarted with the marinade for the beefand then we’ll start on the dippingsauce and at the very end we are goingto start on the beef and then let thatrest and then enjoytogether okay so we’re gonna get startedwith a light marinade that we’re gonnaput on to the ribeye then we’ll womenset that aside and then start on thedipping sauce you prepare it with alittle bit of oyster sauce I’m actuallygoing to add in 1 tbsp fish sauce 1 TSPof white sugar and we’re going to justput that in Chu marinade massage it inthere about 10 to 15 minutes we’ll letthis sit and then we’ll come right backto it it’s marinated now that we’reletting the steak marinade for just alittle bit we’re going to get started onthe dipping sauce this is my favoritepartso what the dipping sauce we are goingto roast some right so we’re just goingto add in two teaspoons of the rice intoa hot pan in the meantime while thatpalin is warming up i’m going to getstarted on the actual one side i’m goingto add in one tablespoon of the tamarindpaste 1 tablespoon of sugarmy favoritethey say that how they came up with thename crying Tiger is that the sauce wasso good and spicy that a may Tigers crybut you know that’s all speculationthere’s no real way of knowing if oneTigers can cry or two if it was thatspicy but I of course love spicy sowe’re going to add in a lot of chili[Music]mouth of rice it sort of smells likepopcorn it’s really nice so I’m going toadd this into the spice grinder now nowI’m going to get started on squeezingthe lime and adding that into the sauceand the shove-it and then we’ll toastadd the toasted rice in it so for thelime juice about one tablespoon will begood we’re going to use one shallot okayso now we’re just going to chop up thelong beans cut the long beans about twoinches and then if you’re making a crankTiger salad and you typically useless[Music]ribeye marinate for about 15 minutes nowI’m just going to give it a good sear oneach side two minutes constantlyflipping when you use some vegetable oilyou can use it any kind of meat[Music][Music][Music][Music]rightfor just two to three minutes and thenwe’re going to slice this up and havethis with some rice and the differentstuffsmells so amazing and we should smellthis right now and let the meat cook alittle bit longer and then I just eat itso it’s going to be maybe outside no itlooks amazing see how it tastesI also chose this dish for dinnertonight because it’s a fairly healthydish to eat especially now witheverything that’s going on kernelviolence we definitely want to be ashealthy as possible only a cut the rightamount of nutrients steak is deliciousyou’ve got your vegetables here rice Imean you can you can eat as little or asmuch as you want I always like to haverice with everything all right everyoneso I went ahead and pleated the steak Ihave my white riceI added some chili on there of coursewe’ve got our dipping sauce it isamazing I actually took a little tastecoming
