▼ Pan-grilled steak ingredients

Steak (250g, 1.5cm-thick)
Grill pan

Boil vegetables ingredients

Water

Asparagus (or vegetables you preferred)

Salt

Olive oil

▼Red wine sauce ingredients

120g sliced shallot or onion

2 table spoon of olive oil
1 garlic clove, lightly crushed (optional)

3 table spoon of balsamic vinegar
200 ml red wine
200 ml Beef stock
30g butter

Method

Pan-grilled steak
1.Take the steak out of fridge about 30 minutes before cooking. Remember to dry each side of the steak. Before cooking, season the steak with salt and pepper. Make sure to season both sides of the steak.
2.Use the highest heat you can generate. Place the steak in the hot pan. Don’t touch it, let it grill for 1 minute. After 1 minute, flip it over and cook for another minute.

3.Reduce heat to MEDIUM, turn the steak over and cook for 2 minutes. And then turn it over again to cook another 2 minutes. The steak I use is 250g, 1.5 cm-thick. The above steps are for cooking medium steaks.

4.Transfer the steak to a plate to rest for 5 minutes.

Boil Vegetables
1. Prepare a pot of boiling water, add a pinch of salt, then add half table spoon of olive oil.
2. Cut the root of asparagus.
3. Add asparagus to the boiling water. Cook for 4 minutes.

Red wine sauce

1.Cut an onion in half, remove the top and the root end. Slice it to your preferred thickness.
2.Sauce pan, high heat, add 2 tbsp olive oil. Add onions and one clove of garlic (optional). Cook for 3 minutes, stirring occasionally.
3.Add 3 tbsp balsamic vinegar, and cook until most of the liquid has evaporated.

4.Add 200ml beef (or chicken) stock and 200ml red wine, cook until the liquid reduced by two thirds. Add a little salt to taste and finally ‘monte’ (whisk) in 30g of butter.
