we have moved into football season.>> Yes.>> Believe it or not, we do-
>> Football and not food ball, football.>> Football, yeah, we’re in the-
>> We’re in the States, yeah.>> The heart of football country,
in Texas, so and plus I->> Friday night lights the whole nineyard.>> So what we love to do, yeah,
the whole distance of the football field.Anyway, what we love to do is
to go to tailgating parties.If you’ve never been to
a tailgating party, you gotta go.>> They’re the best.
>> Because everybody brings amazing food.And before the game, they eat.>> Everybody tries to outdo each other,
too.>> And
we’ve got the trick to help you do that.>> Yes, and what are we making?>> So let’s show you what we’re doing.We’re doing our barbecue
brisket sandwiches, yay!>> Woo-hoo!
>> And guess what,with the way you’re going to be able to
bring these to your tailgating party isthat we are using one of our
favorite things in the world.>> Yes.
>> This is our crockpot.>> Crockpot, crockpot, crockpot.>> Crockpot, crockpot has been in
my family, and I think yours, too,literally for generations.I know my mom used it all the time and
I’m pretty sure her mom did, too.>> It was what Sunday
dinner was always in.>> I know, it was so good and I just love-
>> AndI love this because you
can travel with that.>> Yeah, it’s got these little things,
the handles that you can attach, and it’s->> And it locks it up.>> Yeah, and it locks it up.>> That’s amazing.
>> Just don’t use the->> So you can take it right to the game.>> Yes, don’t use these whenever
you are cooking, though.>> [LAUGH]
>> So anyways, so we love crockpot.We’ll talk a little bit more
about that in a moment.>> Yeah.>> But
let’s jump into this brisket sandwich.>> Let’s do it.>> Okay, these are slow-cooked.Again, I’m from Texas, so
everything is smoked here.But this is going to rival
any barbecue joint’s version.>> It really is, I-
>> The taste is authentic andsuper-duper delicious,
and he will vouch for it.>> Yeah, I can attest to that.>> [LAUGH] Yes, he puts it to the test.Okay, so let’s talk about,
first, the meat.>> This big old jumbo, yes.>> It’s brisket, so this is a brisket,
and this is a cut of brisket.It’s about three and a half pounds.I recommend going anywhere
from three to four pounds.There’s usually a layer.I’m not going to handle this too much.We have a layer of fat there.I asked the butcher to just
kind of trim that off.>> Yeah, just take a little off.>> You can leave a little bit of that fat,
got some flavor to it.>> Yeah, makes it good and
juicy is what it does.>> Okay, so that’s good.So this is really pretty easy.So this is the day before
the big games tomorrow.>> Yeah.
>> So we’re getting this ready sowe can go to bed and smell it all night.>> [LAUGH]
>> Okay.>> That’s the worst.>> Yeah, that’s-
>> You get up around 4 o’clock inthe morning and you’re like, can we eat?>> I know, I know.
>> All right, let’s start, sorry.>> Okay, we dream of me.>> Yeah [LAUGH]
>> Anyway,so this is what I call
my perfect barbecue rub.It’s a great, great rub.It’s good on so many things, but we-
>> Can I try, see what’s->> Yeah, go ahead.>> So I’m thinking there’s-
>> Gosh.>> [LAUGH] There’s brown sugar, there’s
smoked paprika, there’s salt and pepper.We’ve got some coriander.We’ve got some cayenne.We have some garlic and onion powder.And celery, salt, and one other thing.>> A little bit of cayenne.>> I just said that.>> You did.
>> I got it, I got them all.>> Wow, that’s amazing.>> [LAUGH]
>> Okay, so->> So I’m going to rub this liberally.>> I mean, it’s almost game time now,
but that’s all right.>> [LAUGH]
>> Okay, go ahead and do that.>> Yes.
>> So yeah, I mean, go ahead andget all that rubbed all over that
meat because as it coats, it just->> I’m always the one getting messy.>> Cooks into the meat and
it’s so incredible.>> It’s so good and nice.>> Okay, so now we need some
liquid to go with the rub.So what we’ve got here,
this is super easy.[COUGH] This is just a cup of good,
hearty beef broth, andjust get over a good quality brand,
or you can make it.But for this, store bought is just fine.And this, ladies and gentlemen, this is-
>> My favorite thing in the world.>> So important,
this is my homemade barbecue sauce.>> Put it where they can see it.Here, take that off and
put it down a little further.>> Yeah, okay, my homemade barbecue sauce.>> There we go.
>> Folks, this is what makes it really,really authentic, and
it’s so easy to make.So I’m going to go ahead and
I’ve got a cup of this.I made a bigger batch because we’re
going to add more to this later.And I’m just going to put this in here.And then I’m going to mix it up.And while I do that-
>> And while I’m rubbing.>> While he’s rubbing andI’m mixing, we’re going to show you how
to make this incredible barbecue sauce.>> So good.>> Over medium heat,
add two cups of ketchup.To that, add a quarter cup
of apple cider vinegar, andthen a quarter cup of molasses.Hm, molasses, yes.Give it a stir.Then we’re going to add a tablespoon
of ancho chile powder anda tablespoon of dried yellow mustard, a
teaspoon each of dried oregano and cumin.Add that to the party and then stir it up.Now we’re really going to
deepen the flavor.We’re going to add a half
a teaspoon of liquid smoke.Don’t add too much.A little bit goes a long way.Now we’re going to add some hot sauce for
a little kick and some kosher salt anda pinch of black pepper.Stir all that up.And we’re going to let
this come to a simmer, andit’s going to simmer beautifully.So those flavors meld and
we have an amazing barbecue sauce.>> So see, is that not so,
I mean, it’s really simple->> That was in our old kitchen, andwe’ve had that video for a very long time.>> I use that barbecue-
>> But we’re never going to change it.>> I use that barbecue sauce for
lots of things, like barbecued shrimp,all kinds of things, and it’s awesome.So okay,
you’re done rubbing that into the meat.>> Yes, I’ve rubbed this meat.>> So that’s good.
So all we have to do now, okay,you’re great, you may not-
>> I made a mess.>> That’s okay, we’re used to that.>> [LAUGH]
>> You may not use all of this rub,that’s okay.And it also may feel like,
wow, I’m putting too much in.Don’t worry, I mean-
>> No, dont rub it.>> It just blends in with the liquid and
it’s delicious.And also, if you get your roast andit’s too big to fit into your crockpot,
no problem.Just cut it in half and
you can just squish it in there.It’s going to cook down and
it’s going to fall apart tender,so you don’t need to worry about that.Okay, now all we do,this is the barbecue sauce again that I’ve
mixed with the cup of good beef broth.And you just put,
I guess already I’m getting.I get the glimpse.>> [LAUGH]
>> Okay, andnow we’re just going to put this beautiful
lid on our favorite fabulous crockpot.And yay, crockpot.Okay, and
then I’m just going to turn this on low.That is very important.It’s on low.And then I’m going to
crank the time up to->> For how long?>> Ten hours.>> This is a programmable-
>> Ten hours!>> Crockpot, so that makes it super easy.And we’re going to.>> Yeah, we’re going to go and do-
>> Have to wait for ten hours, butyou’ve gotta get your pompoms and your
face paints and your little gogo boots.>> [LAUGH] Yes.>> He comes as a Dallas-
>> All of those go together, yeah.>> Dallas Cowboys, see you later.>> [LAUGH] No, I don’t.>> All right,
we’ll see you in the morning andwe are going to make some incredible
barbecued brisket sandwiches.>> Yay.[SOUND] All right, it’s game day.>> What a great night’s sleep.It’s game day!>> Great night’s sleep.>> That’s right.
>> Smelling that all night.>> Smelling this, I mean,
is like life couldn’t be better, so->> That’s ridiculous.>> We’re big old Cowboys fans.>> If you couldn’t guess.>> I know, you either love them oryou hate them and-
>> Yes.>> And lots of people hate them.>> Well, you’re a Texan.>> I was born in the Dallas,
Fort Worth area.So it’s like when you’re an infant,I think they inject something in you
that says, you will like the Cowboys!>> See, I was born in Denver, Colorado.So I like the Broncos and I like
the Vikings, because I’m a Norwegian.>> And John Denver.>> And John Denver, yes.>> But anyway, no, sowhen we go to the game, you’re more
focused in critiquing the cheerleaders.>> [LAUGH] That’s not true.>> But you do keep an eye on them.>> That’s not true.[LAUGH]
>> You keep an eye on the team,too, that’s for sure.>> Of course.>> Okay, so now, all right,
we talk way too much.>> Yeah.
>> Okay, so now this smells soridiculously good.I mean, it smells like a barbecue.And we’re so getting close to-
>> Come on, do the big reveal.>> Getting close to tailgating time.>> Yes.
>> So we got our beautiful crockpot.It’s been doing the job for us all night.>> Lord.>> I’ve actually, what do I have it on?I’ve put it on, yeah.
>> I think it’s on warm.>> I’ve put it on warm,
because we let this baby go for 12 hours.>> 12 hours.>> It’s ready after 10, but I want this
to be so tender, we let it to go 12.>> It’s so good.>> We slept in a little bit,
so anyway, so now->> And that crockpot keeps it warm.>> Once it reaches your desired,
you program it for 12 hours,it automatically puts it on warm and
it couldn’t be better.>> I love it.>> So are we ready?>> [LAUGH] Yes, I woke up ready.>> My gosh, look at that.>> Look at that.>> The smell is insane.>> Yes.>> Now, I guarantee you folks this is so
tender,it’s going to take some little
fancy footwork to get this turn.>> That’s okay.>> But now what we recommend
doing is just get it.It’s so tender.Well, even if it falls apart, who cares?>> Yeah, that’s all right.>> Just get a couple of, there we go.>> Yes.>> That’s great.>> Bring it on over here.>> Get you something to kind of help you-
>> Look at all that juice.>> Transfer it, and we like to use
a nice big roasting pan like this.>> So you have room to-
>> That you can shred.>> Room to shred.>> So now you’re going to start shredding.Now, while he-
>> Look at that, you guys.>> Let’s just see how easy it is to shred.>> All right.[LAUGH]
>> I’m just a little->> I know, it’s ridiculous.>> Okay, all right.>> My gosh.
>> But we’re not quite done.It may seem like we’re done.We’re really, really close.But we need to finish this off,
because it’s good.But we’re about to put it over the top.So now what we’re going to do-
>> I’m getting another meat facial.>> Wow, is that like-
>> [LAUGH] Brisket facial.>> Sort of like Lady Gaga on her dress.>> [LAUGH]
>> Anyway, okay, sonow what we’re going to do, this
incredible juice, it’s got so much flavor.We don’t want all of it, though.It’s just a little too much.>> Make sure that they
can see that over there.>> Okay.>> Be careful, you got it on your jersey.>> No!>> [LAUGH]
>> My gosh,they won’t let me in the stadium.Okay so,
there’s a little extra you see in there.There’s going to be some little
fragments from the meat.We want to get rid of that.So I’m going to just put this back here.Now we do want to save some of this juice
because we’re going to put the shreddedmeat back in here.And we’re going to let it cook on high for
just 30 minutes.So how are we doing there?>> Look at that!>> Okay.
>> That fell apart, literally.>> Yeah, now also, a lot of times,
what I do, I mean->> You give it a chop with your->> Yeah, I do give it a chop.>> Here, chop it.Give me a hand and chop it.
>> Well,I’m not going to chop it in there.>> Why not?
>> Just go ahead andlet’s just transfer it
onto the cutting board.>> You got it.
>> And I can do this very quickly.Let’s just dump it out there.>> Okay, dump.>> I mean, this is a matter of taste.>> [LAUGH] All right, well,
I don’t know what you’re having.>> I know, wow, that is risky, putting
something like this in front of Wesley.>> [LAUGH]
>> But keep shredding.I then get just a nice, sharp knife and-
>> Yeah, just do some chop.>> Give it another little chop.When you go to a barbecue joint-
>> You’re always like,give me the chopped beef sandwich.>> That’s right, and
you say it just like that.>> I’ll move out of the way.>> Thank you, because-
>> I could have choppped.I’m a good chopper.
>> Yes, butit’d be next season then by the time
we finally get it into the game.Okay, that’s good.Now if you like it really finely
chopped like you see in some places,just chop it further,
but that’s no big deal.>> So.
>> Okay, Flo has decided to join us.So I’m going to move this out of the way.>> Now don’t you need two
cups to put into that?>> Yes, so what we’re going to do is we’re
going to move this back here and then->> Flo is like, there’s juice everywhere.>> You go ahead and
transfer that back in here.>> You got it.>> I’m going to take two cups of this
beautiful juice, and just very carefully.>> I want you to help me with this.>> Okay, well, let me go-
>> If you can, yeah,get your juice in there-
>> Sorry, folks, okay, we’re good.>> That’s okay, grab that skillet,
that thing there.>> We’re good, I’ve got the knife.>> There you go.>> Okay.
>> Now.>> It’s always an adventure.>> [LAUGH]
>> It’s sort of the Cowboys->> It’s okay!>> Cowboys season.>> People are not going anywhere.>> You never know what you’re going to get
with the Cowboys, or with Kris and Wesley.>> [LAUGH]
>> But I tell you, actually,it’s kind of funny, because they’re
playing right now as we speak.>> Yeah.>> I’m going to get one more
cup of this amazing juice.And like I said,
this is just about two cups.>> The dogs are circling.>> [LAUGH] Yeah, they really are.Okay, now this is that incredible
barbecue sauce that we made.Remember I said save it?>> Yeah.
>> This is a cup thatwe’re just going to add back into this.And this is where we are starting to
get extreme barbecue flavor, okay.>> Now if we were going
to a tailgate partywith this-
>> Which we are.>> [LAUGH] Does this sit for 30 minutes?And then you could take it, yeah.>> Yeah, and what we’re going to do
is we’re going to put it on high andjust let it just really
intensify the flavors.>> Yeah.
>> And then it’s good to go.Then you can, this carries,
it’s so portable, it’s so great,bring the whole thing.Remember, lock these in place.Don’t lock them while you’re cooking.>> While they’re cooking, exactly.>> And then they’re good to go.But when we come back, I can’t wait for
the game because it’s->> [LAUGH] Yes.>> I’m too hungry.>> Our tailgate is going to be right here.>> [LAUGH] That’s right, as it usually is.Okay, I’m putting this on high for
30 minutes, and then it’s eating time.>> Yay![SOUND]
>> The time is here.We’re going to score a touchdown
no matter what happens->> Yeah, exactly.>> With this game today.>> Yes.
>> Okay, so this, my friends->> Pop that open, yeah!>> Is absolutely beautiful.So just a couple of words,
we live here in Texas and people are very,very opinionated about their barbecue.Some people like their barbecue
beef sandwiches to be real,just to dry,
to not add any kind of additional liquid.So if you like it that way,
then add less of the liquid.What the liquid will help, it would,really especially helps if you’re
bringing this to the tailgating party.>> because it would be really dry if
you didn’t have any liquid in it.>> This is brilliant, this crockpot for
keeping it warm and not overcooking it.But over time, of course,
it will dry a little bit.So that liquid is good for that.>> All right, you need to stop talking.>> Okay, I know, this is soaked.>> Spoon me up some there, Mr. Man.>> Look at that, all right.>> Wow.>> This is so incredibly tender.I’m going to make two of them because I
know you’re going to eat all of yours.>> [LAUGH]
>> I know you like them.>> You made me two.>> No [LAUGH] okay,
we’ll stack them nice and high.>> There we go.
>> Okay, andyou see we’ve got our buns here.We love to toast our buns.>> We like to toast our buns.>> We just threw it on a grill.Just throw them on the grill for
just a couple minutes.You could toast them under the broiler,
in a skillet or don’t even toast them.>> Yay, look at those, people.Now, we like to make
ours even a little moredelicious with your
homemade barbecue sauce.>> That’s the reserved barbecue sauce.>> Look at that, just squirt it.>> And
we just put it in a little squirt bottle.That’s great for transporting to the game,then people can easy breezy do
that however you want to do it.>> Then you know what?>> We love a little white onion.There’s something about, we think,
the onion combined with a little pickle.>> It’s so good.I’m sorry, my arms are getting in the way
so they won’t see me building this.>> Okay, build-
>> Then some pickle.>> If you build it, they will eat it.>> I just like to sprinkle it on there,
look at that.>> Yeah, so
whatever kind of pickles you like.We had some just small petite dill
pickles that we just sliced here.We thought we had some hamburger
sliced pickles, but that’s->> Okay, people.>> That is, I mean-
>> Look at that.>> You serve that at game day-
>> Look at that, just.>> I’m a little, I’m getting a little-
>> I’m sorry, I’m going for it.>> Speechless.
>> It’s been 12, 13,000 hours.>> Yeah.>> My gosh.>> Touchdown!>> [LAUGH] Extra point, two points!Is it everything and
more you’ve ever dreamed of?Would Tom Landry be proud?>> Lord, whoever Tom Landry is.>> [LAUGH]

easy to make.You saw it takes minutes and
it makes all the difference, yeah.And a little bit of onion and
