Ingredients Needed for Sandwich:
– 1 Chicken Breast
– 1 Brioche Bun
– 2 slices of Cheddar Cheese
– A few slices of thinly sliced Red Onion
– 1 chopped Green Onion

For Wet Rub:
– 2 tablespoons of Olive Oil
– 1 teaspoon of Garlic Powder
– 1 teaspoon of Onion Powder
– 1 teaspoon of course Black Pepper
– 3/4 teaspoon of Smoked Paprika (regular Paprika is also fine)
– 1 teaspoon of El Yucateco Red

For Sauce:
– 1/4 cup Mayo
– 2 teaspoons of El Yucateco Red

Instructions:
Always wash your hands before prepping any food recipe. Begin by making the Wet Rub. Combine all ingredients listed above into a bowl and use a whisk or spoon to mix together well until everything has dissolved and taken on a paste type consistency. Next, make the sauce by combining the ingredients and mixing well, then chill in the fridge until it’s time to use it.

Trim the Chicken Breast by removing any hard fat from the exterior. Now, butterfly the chicken breast as shown in the video. Apply the wet rub to all surfaces of the chicken breast as shown in the video. Allow this to sit while you preheat the grill to high heat, make sure your grill is clean and safe to run at high temperatures. Place chicken on grill and allow to cook for several minutes. Once you see the chicken beginning to take on color and moisture pooling on the top, give it a quarter turn (for grill marks). After a few more minutes, flip the chicken to cook the other side. Monitor the chicken temps with a meat thermometer and make sure it’s cooked to a safe temperature. Once it’s safe, place two slices of cheese on top and allow to melt. Once melted, build your chicken sandwich, make sure to add the sauce to the bun and ENJOY!
