Grilled Chicken Caesar Wrap

Ingredients

Chicken:
4 boneless skinless chicken breast halves (about 8-ounces each)
1/4 cup extra-virgin olive oil
Zest of 1 lemon (about 1 teaspoon)
1/4 cup freshly squeezed lemon juice (about 2 lemons)
2 cloves garlic, minced or grated
Kosher salt and freshly ground black pepper

Sour Cream Caesar Dressing:
1 cup low-fat sour cream
2 tablespoons grated Parmesan
1 tablespoon freshly squeezed lemon juice (about 1/2 lemon)
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 anchovy, smeared with a fork to a paste
1/2 clove garlic, minced or grated
Kosher salt and freshly ground black pepper

Sandwich Build:
1/2 pint cherry tomatoes, quartered
1 heart romaine lettuce, chopped into bite-size pieces
Parmesan Croutons, recipe follows
Four 12-inch sundried tomato tortillas, toasted with a little oil

Parmesan Croutons:
1/2 French baguette day-old, crust removed and cut into 1/2-inch cubes (about 4 cups)
2 tablespoons grated Parmesan
Kosher salt and freshly ground black pepper
2 tablespoons olive oil

Directions

For the chicken: Place the chicken in a shallow dish just large enough to hold them. Whisk the oil, lemon zest, lemon juice and garlic in a small bowl until combined. Pour the oil mixture over the chicken and toss to coat. Cover the dish with plastic wrap and refrigerate, at least 4 hours and up to overnight.

Preheat a grill pan or an outdoor grill to medium-high heat. Remove the chicken from the oil mixture and pat dry. Sprinkle with salt and pepper and grill the chicken until golden brown and cooked through, about 12 minutes per side. Transfer the chicken to a plate to cool slightly. Thinly slice the chicken against the grain and set aside.

For the dressing: Mix the sour cream, Parmesan, lemon juice, mustard, Worcestershire, anchovy, garlic and season with salt and pepper in a medium bowl.

For the sandwich build: Place the sliced chicken, 1/2 cup sour cream Caesar dressing, tomatoes, romaine and Parmesan Croutons in a large bowl. Toss to coat evenly. Fill each tortilla with the chicken mixture.

Parmesan Croutons:
Yield: 4 cups
Preheat the oven to 375 degrees F. Add the bread and Parmesan to a large bowl and sprinkle with salt and pepper. Drizzle with the oil and mix well. Spread the mixture onto a baking sheet and bake until light golden brown, about 15 minutes.

let’s make our parmesan croutons for thewrap now we’re gonna make these smallenough very bite-sized so when we wrapit with the chicken and the lettuce andthe dressing each bite will have alittle bit of crunch in there and thatcomes from these croutonsso I’m using a day-old bag out hereperfect for crouton making right into asheet pan here shake it even it outstream some olive oil in there you coulddo the thumb deal because we are keepingit light I don’t want to put too much onhere some grated Parmesan cheese makingit rain like a Tuscan Sun shower hmmsalt and pepper to taste just a littlebit all right these go in the oven at375 for about 15 minutes till they’regolden brown so these are gonna go greatin our chicken caesar wrap which i havemy chicken right here it has beenmarinating all night in olive oil lemonjuice lemon zest just garlic keeping ithealthy and lean we got my grill pannice and hot want to develop some coloron that but make sure it cooks all theway through it’s already smelling greatin here we didn’t use any salt or pepperin our marinade so now we can season theexterior directlyand these will go about 12 minutes asideso there’s no more pink in the center orat about 165 170 on your incident readthermometer let’s make the sour creamCaesar dressing alright so let’s startwith a cup of low-fat sour cream next atablespoon of Dijon mustard for thatextra special tanganother must ingredient to have in anyCaesars parmesan so we’ll do about 2tablespoons of this 2 teaspoons ofworchestershire right gives that nicemeaty quality to your Caesar I love mesome Worcestershire let’s do one wholegarlic clove zested right in there thejuice from a half a lemon[Music]alright did you hear that it’s startingto change noise that means it’s time todo fancy turns there we go perfect seeone less ingredient to my sour creamCaesar is an anchovy don’t be scaredwhen I put this anchovy in there you’renot gonna really chase fishiness you’renot gonna taste the anchovy but if Ididn’t put it in there you’ll definitelytaste that something is missing in thisCaesar we’re just gonna mash it with thefork put it right in there and get allthis incorporatednow that’s perfect that’s what I’mtalking about see still dripping juicewe weren’t proud in it now we can flipit oh yeah all right our grilled chickenhas a chance to rest slice it nice andthin look at that perfectly cooked juicyvery good haw ma’amsmoky lemony little garlicky let’s useromaine it’s the obvious choice for anygood Caesarwe caught ours a little smaller herebite-sized pieces some quarter cherrytomatoesdon’t forget our croutons and of courseour homemade sour cream Caesar nice andlight but very very flavorful now Caesarsalad is like the one wrap I like tocombine all the ingredients first andthen put it in the wrap just to makesure every crouton every piece ofchicken every tomato every littleshredded lettuce has a bit of love fromthat sour cream Caesar on itI like the element of fresh sun-driedtomato tortillas combined with theCaesar plus the beautiful color it’slike a full moon and I’m changing into awerewolf there we go now we could takeour tossed salad put it right in themiddle make sure we get some croutonssome tomatoes evenly spread across don’tover stop this and if this is your firsttime doing a rap start small all rightget the mechanics of wrapping a sandwichsides go in first then we do the doublethumb turn over top edge method now thisis the tricky part you want to keep ittight and then with your little pinkyfingers kind of get those in there yousee tightly roll and weed right therethat’s a wrapthere’s nothing heavy in it but chickensvery tender and I taste the lemon andthe parmesan even that a little bit ofanchovy in our sour cream Caesaryou
