Grilled Chicken Wings – Covid-19 Pandemic Cooking Series #9

One of our more popular appetizers are the chicken wings when we ran the Dragon House Restaurant for 45 years starting in 1972. Back then, we lightly coat the wings with flour and deep fried it for our mega buffet. But it’s a bit too messy at home so it’s just as good, if not, better doing it on the grill. This recipe is really simple to put together and super tasty!!!

Dragon House Chicken wings recipe

Ingredients:

2-1/2 # (1134g) Chicken wings (10)
1/2 Cup (118ml) Light soy sauce
1/2 Cup (118ml) Rice wine
5 slices fresh ginger (crushed)
1 small lemon
White pepper powder
Salt

Directions:
1. Prep wings by cutting off tips. Make a cut along wing joint and bend outward to dislocate joint.
2. Put wings in zip lock bag.
3. Sprinkle salt and white pepper powder on top of wings. Pour in soy sauce, wine, and ginger. Cut lemon in half and squeeze juice into wings. Marinate for at least 2 hour in refrigerator. For best results, marinate overnight.
4. Grill at 350°-375°F (176°-190°C) for 25-30 minutes, turning frequently.
5. Internal temp should reach 165°.
6. Serve immediately. Enjoy!!!

hi everyone chef pd here hey it’s theweekend I know because I just checked mycalendar I don’t know about you butwhat’s this quarantine in place the dayskind of run together now week five isover and done withand we’re gonna celebrate it with a veryspecial chicken wings recipewho doesn’t love chicken wings I know Ido and we’re gonna do it drinking housestyle yeah back in the day we would gothrough cases and cases of chicken wingsa week now I’m gonna show you how it’sdone let’s go alright who’s really gonnaneed for me I have two and a half poundsof wings about ten wings you can alsouse chicken leg but if you’re gonna dochicken legs you’re gonna need to cutthe meaty part open so that it’ll cookfaster I have a quarter cup of light soysauce quarter cup of rice wine or anyyou can cook that using you can usecooking sherry a cooking wine you have asmall lemon or you have a large one fiveslices of ginger salt and white pepperpower okay I’ll show you how to prepthese wings now okay well you just gonnathere’s three parts of the chicken wingsyou got the tip right here you got theactual wing part and you have thedrumming okay we’re just gonna give itat the tip gonna cut along the jointhereand then the joint here just make alittle cut and open it up now it alsolay flat he won’t curl up on you and Iwould recommend getting a ziploc bag oranother bowl you can marinate it throughthere again the tip a little slice hereyou can just pop itokay we gonna salt it wake up her powderthe ginger just gonna crush ityour wine rice wine vinegaryou’re gonna stick this in arefrigerator for at least a couple hoursovernight is the best and then we’regonna grill it see it a bit okay justhold the wings outI’ve had it marinated for about two anda half hours there’s a couple of ways wedo it at the dragon house one way is touse the same recipe but we’re gonnaflour it and then you’re gonna deep-fryit and that’s the way we’ve normally useit for the buffet but I like this waybetter because it’s less mess and whenyou do it at home you just use the grillokay so basically I got the heat we’reall heated up to about 375 you want tomake sure you have two pairs of tongsone for the raw chicken and then theother one for the cooked chickenokay gonna let it grill we’re at the10-minute mark kind of move wrongsix-minute mark I kind of moved itaround okay cuz it was awesome hot spotshere stall see there’s a nice browningdo it right now and again depends onyour grillyes I’m hot spot you might want to moveit this is a spot right hereit’s okay you can just open it and moveit around a little bit it’s okayand I crank the heat down just a littlebit so it’s about 325 degrees now allright we’ll just let it cookoh okay we’re rid of about a 20-minutemark now and again I moved it probablyabout 15 minute mark looking pretty goodrobbing up really nicelythis is what he can use the othertommnowI have another five minutes or sookay we’re about the half-hour markcheck the largest wanted to see ifthat’s a 165 that’s what you want to getto internment in turn north how muchsure to 155we’re right at 6 165 okay that’s donetake these outokay let’s try it check it out it’s hotbut I’m really good Dundalk whisper toit you can taste the ginger and thelemon and all the seasoning just meltsin there and it penetrates it in theinto the the chicken itself it’s justexcellentokay so I hope you get to try thisrecipe out whenever I make it there’snever any leftover and I’m sure it’sgonna happen to you okay so make extraokay so please try it out and I wouldlove to hear your comments share if youliked it thumbs up and please subscribefor more recipes next time great so abunch of viewers are interested inbuying these black t-shirts Dragon Houset-shirts so I’m interested please emailme at this address down here right thereand let me know what size and quantityyou want and then now we’ll try to getsome and get them up to youyou
