everybody this is Scott and welcome backto the smoke with West comm YouTubechannel today I’m gonna be showing youhow I like to make chicken wings on thepit-boss Austin XLall right so what we got here is somechicken wings these came together whichwe know flap drum that I split them upso we got six flat six drumettesso the first step I like to do and thisis how to get really good crispy skin alittle oil on there I’m using avocadooil it has a real good flavor to it highsmoke point I like to use it for justabout everything first thing forseasoning we’re gonna put on is theall-purpose rub I use this on a bait fora base layer on just about everythingso sprinkle a little in there give alittle toss not a real heavy coat secondlayer is the sweet heat rub so let’sgive it a little shake in there nicelittle coating on all the wings give ita nice toss a little bit more tops Ilike this on wings because a the sugaris in here will give it a nice crust andcrisp to it and be has a little heat inthere which I like for wingsall right these guys are evenly coatedthey’re good to go so let’s throw themon the smoker so we got the pit bossawesome exhale all fired up it’s runningabout well over 300 degrees now I hadsome other chicken in there I wascooking so I haven’t set it to 50 so alittle cool down here no problem but thefact that it’s up at a little bit highertemperature which I kind of likes thatway we get a nice crispy skin on it soI’m gonna put them clear on theright-hand side of the smokeryou saw my last video you know theright-hand side of the smoker is alittle bit hotter than the rest of itI’ll link that video up here on the highcard but the way it runs the sidesoldest smoker a little bit hotter whichis fine with the wings that way they’llget a nice crispy skin on we’re gonnalet these go about 10-15 minutes we’llcheck them out then all right it’s beenabout 20 minutes let’s check on thewingspit boss has settled down to about 250degrees so you start to get some nicecolor I’m gonna give them all a niceflip so he was cooking here probablyrearrange him a little bit like I saidearlier this right side is a little bithotter than the left side so some ofthese wings over here in the center I’llput them over to the right that way weget some nice even cookingso I’ll rearrange them a little bit I’lllet them go about another 20 minutes andwe’ll see you thenall right so it’s been another 15minutes check on the wings looking goodget a nice colorwhat we’re gonna do I’m gonna crank thespellcraft at 300 degrees that’s reallygonna help the skin crisp up so we’regonna crank it up to 300 check it outanother 10 or 15 he’ll be about donethen so see you Tim all right so it’sbeen down another 15 minutes 190 whichis good chickens down to 165 but likewings thighs that type of stuff you’regood190 it’s not gonna be dried out so I’mgonna take them off shut down the smokerand let’s give them a try all rightlet’s get one of these wings to trystill super hotI’ve donenice crisp on the skinthis point you could like costume abarbecue sauce with hot sauce I likethem just like this maybe it’s a littleranch maybe with a little extra hot sidethat’s my dog she wants them too butthanks guys for watching don’t forget tolike this video subscribe and we’ll seein the next one
