Ingredients:
(For the marinade)
-35 grams garlic clove or 1/4 cup
-50 grams ginger or 1/3 cup
-200 grams rice wine vinegar 1 1/2 cups
-300 grams soy sauce 2 cups
-50 grams Sambal 1/4 cup
-40 grams Maui Wowee Blend 1/4 cup
-20 grams Dijon or 2 tablespoons
-20 grams tomato paste or 2 tablespoons
-2 cups H2O
(For chicken)
-one whole bird or chicken parts of your choice.

in today’s episode in today’s episodeI’m gonna be working on another simplechicken dish we’re doing Huli Huli nowHuli Huli Huli Huli is a Hawaiianchicken dish it basically just needs toturn so all it is is a rotisseriechicken over a wood fire[Music]you[Music]chicken broken down any kind of piecethat you want I prefer the thigh on slitsave the chicken carcass or later I’mgonna probably make stock with this likethe video if you want me to make a stockvideo alright now we’re just gonna getblender blend our marinade nice andsmooth now I’m gonna do you guys a solidI’m gonna wait out in grams so you canget the exact recipe that I have hereprotip go ahead and tear the blendersweight on your scale so you could justmeasure it on one thing we’ve got 35grams of gin Garth we have 35 grams ofgarlic got 50 grams of ginger skin onI’m just gonna do 200 grams of seasonedrice wine vinegar make sure to get thisbottle best one to 15 good enough I’mgonna do the OL rooster on the bottlezomball 50 grams of that 300 grams ofsoy sauce give or take 320 good enoughthe main ingredient is Maui well alsoyou might be asking yourself why does hekeep using this Maui wowie and spiceology stuff in every video so far well Iwork for spice ology now I’m creatingcontent full-time in the Test Kitchenright now at home because of you knowwhatso anyways Maui Wowi inabout 40 grams don’t worry I’m gonnaalso put this in cups for all you peopleI like I’ll put it in cups don’t worry Iforgot two ingredients Dijon mustardabout 20 grams of that about 20 grams oftomato paste give it a spin go ahead andreserve a cup of this you’re gonna usethis later on and then add in about 2cups of watermarinade done now just go ahead and layyour chicken flat and a container thenwe’re just gonna pour that marinade innow we’re just gonna let this rest coverit put it in the fridge let go justgonna toss these in the fridge and letthem marinate overnight at therestaurant I used to work at I would dothe same thing with the chicken wings wewould let him go overnight grill themoff the next day over the wood fire andthen finish them in the oven with thisMaui Wowi spice that pineapple andtamari and sesame in there it’s gonnacaramelize very nicely if we do it likeon a hot cast-iron if you don’t have agrill so I’m gonna show you thattomorrow thanks to movie magic I’ll showit to you in a few seconds see you thereokay I’ve got a cast-iron skillet now ifyou want to see right here that’s whatI’m working with one of them grill gratecast irons I have this at high heat nottoo high though just between being highwe’re gonna get some color on thischicken now so now I’m just gonna markoff the chickennow what’s happening right now is thesugars from the marinade and that MauiWowi they’re caramelizing they’re doingthe other thing flavors are happeningthings are happening it’s gonna bedelicious I like to put rubber bands onmy tongs just a little thing that we doat the restaurant it’s good for grip youknow so anyways give them a flipnow I’m just gonna brush them with thatleftover marinade from yesterday it’sthe light brush then when we flip thisback over it all that’s gonna caramelizeso we can go ahead and flip this overagain and caramelize that marinade nowonce these once these are fully markedup I’m just gonna put them on a sheettray like this piece down on a tray okayI can actually smell a pineapple fromthat spiced delicious so now we can goahead and toss these in the oven[Music]I’m just gonna let this go for about 10minutes or so at 375 degrees Fahrenheitall right fresh out the oven and as youcan see the color is just like beautifuldark mahogany just gorgeous gorgeousgorgeous color on this chicken alrightso there you have it here clearly Hulichicken it’s a very delicious dish goahead and try it out you can even try itout with a different protein if youdon’t want to do chicken try it withlamb or or maybe beef or whatevertry it with something else tag me let meknow what you think thank you so muchfor watching the video go ahead and likethe video subscribe and I’ll see you inthe next one[Music]you[Music]
