today we’re going to smoke up some beefribs these unfortunately aren’t thosebig thick Dino ribs Dino ribs or if youwant to call them these are those realthin ones I got them let’s cook themserve these guys up I’m gonna make oneof my favorite dipping saucesit’s called Kentucky barbecue dippingsaucefrom Owensboro Kentucky this sauce is aWorcestershire said how you say itpepper vinegar apple cider vinegar it’sgonna be awesome hope you stay with me[Music]I’ve been having my groceries deliveredordered baby back ribs and ends up withcenter cut beef ribs so hey we’re gonnacook them anyway I’m just putting alittle sangs oil on here you can useolive oil you can use vegetable oil bothsides now I do not take the membrane offof beef ribs not the same as pork ribsbut you can if you want okay we’re justkind of season these guys up real niceseason I’m using is our own this is anarmadillo pepper it’s a steak burger rubit goes good on beef ribs roast we hopeto have this available in about a monthso there’s my plug for that anyway justgoing to season up both sides let themsit here about 10-15 minutes while thepit-boss comes up to temp this pit mostsaid on the smoke setting you can seewe’re at p4 running about 190 degreesI’m using a blend of cherry maple andhickory pellets today we’re just gonnalet that guy go probably a couple hoursto get some good smoke on it and thenwe’ll crank the temp up just a littlenow you can see we’ve got a really nicesmoke going she’s been running at 155little lower than usual what I’m goingto do now is I’m going to turn it up to250 maybe 300 what do you think I say300 it will runsomewhere between 275 and 290 and youcan see these guys are nowhere writtenhere ready right what I’ve got here isjust a 50-50 mixture of apple cidervinegar and water I like to use applecider vinegar with beef ribs myself infact the dipping sauce I’m going to makefor this is going to have apple cidervinegar in it we let them go anotherhour two hours where we check on themagain in here I’ve got 2 cups of water1/2 a cup of Worcestershire saucequarter cup of apple cider vinegar andthen over here what we got I got 7tablespoons of brown sugarI got a tablespoon of black pepper wegot a table half a tablespoon ofHimalayan sea salt I’ve got a half atablespoon of garlic powder and onionpowder here and then we got 3/4 of ateaspoon of allspicenow also in here what I’ve got is somelemon juice right I’ve got 2 tablespoonsworth I just turned this burner on highand you’ve probably figured out alreadyif you don’t like Worcestershire andblack pepper this isn’t gonna be yourfavorite sauce now what smells great Ijust love this sauce we’re not going tothicken this up like a you know like youwould say you’re trying to make a KansasCity barbecue sauce or something whereit gets really thick with the tomatoketchup I just want to make sure thatsugar and all those dry seasons areblended in well with the liquid so I’mgonna bring it up to a simmer we’ll letit go 5 or 10 minutes it’s been just shyof 6 hours look at that see how easythat goes inthat’s how you tell but beef ribs donedon’t worry about the temperature theyhave pulled back off the bone but theyalways will in these real thin smallones we’re going to get this off hereI’m gonna slice them up let them restand then we’ll try them with thisdipping saucecutter beef ribs resting here cut uplet’s go drizzle little that Kentuckybarbecue sauce it’s actually not abarbecue sauce it’s more of a dippingsauce it’s Kentuckydipping sauce across them that’ll begoodand then just for decoration littlegreen onion just to give them somecollar right you don’t have to do thisyes sir we got our ribs here see if Ican show you here a little bit of smokering right there you see that pinkaround the edge let’s have a look atanother one here that’s an end piecelook they’re good and juicy can you seethe juice in there camera I hope you cansee that I mean they are juicy look atthis can you see that juice everywherein these guys I’m just gonna get alittle bit more of that Kentuckybarbecue sauce on here dipping saucesorry hmm one second pleaseyou like that mm I’m sorry chucklingmethyl mmm tender BP little pull andthat’s all I’ve made this sauce now forfive times I don’t know for surelike I’m mentioned it’s originally formutton but I’ve used it on pork loinpork tenderloin and now these beef ribsit works just awesomehey they weren’t very much money I thinkthey were $4.99 for the two pounds ofbeef ribs if you like this video I hopeyou subscribe have a good day[Music][Music]
