what’s happening guys and welcome backto another episode today we’re going tobe combining three of my most favoritethings bourbon barbecue jab Kjar forgotone of third one is what’s that manyguys and welcome back to another episodetoday we’re going to be talking aboutbarbecue sauce this is gonna be combinedin say three of my favorite things whichare barbecue bourbon oh for goodnesssake it’s briefings man what’s happeningguys and welcome back to another episodetoday I’m going to be showing you how tomake my backyard barbecue sauce this iswhere I’m gonna be combining three of mymost favorite things in the world BBQbourbon and coffee[Music]so barbecue sauce what’s not to likeespecially with this one bourboncoffee all that kind of stuff allcombined with a barbecue and I think theshop ball stuff is any good whatsoever Ithink this is a great one to do it doestake a little bit longer than a hotsauce we did last week she got our allowI would say for this one an hour an hourgive yourself an hour if you know you’vegot friends and family coming in thenext day get it done the day before getit in the fridge let those flavorsmarinate so I’ll show you what we’regonna need on the ingredients front andthen we’re gonna crack off from there[Music]so first port O’Call and my favoritething in the whole world garlic I lovegarlic on pretty much everything unlessit’s sweet and then that market I saidthis is sweet so that’s okayone clove of garlic and you’re gonnanearly half an onion if you’ve got amortar and pestle get it out you’regonna need that we’re one of thoseroughly chops all of your stuffjust in the chumps I literally justroughly Bank it up chop it up nothingfancy whatsoevermore gonna deal with this is get it inhere we want to create like a paste withit so sticky garlic in first and quiteimportant before you start messing it upis to get yourself a little pinch ofsalt what that will do is just draw outthe moisture out the garlic and make ita little bit easier just start smashingtogether so here we go[Music]okay so I know there’s a bit as much inthere but there’s tons and tons offlavor you want to just get it into thatsort of a pasty kind of mix then youwant to add your onions[Music][Music]and again we’re just gonna smash this upinto a really nice post so after about10 minutes you’re going to end up withsomething that looks a little bit likethat once you get to that point it’stime to get your pan out okay so you getyour pan get it on and get it nice andhot first stage is to get yourself agood quality olive oil and just go inwith a bit of a glugliterallyso not much so they heat up for a bitand once it’s bubbling away you want toadd your garlic and your onion and letthat sweat off for about I’ve know fiveminutes give it five minutes in therejust to do what it needs to do I’m sureat that point I’m gonna bring you backso after ten minutes something like thatnicely spray it off okay so got a littleconfession to make the joys ofTechnology I did a whole segment on whatingredients I was putting in and myphone decided to stop the call inbecause it was full and I’ve already gotthrough like three of these and I’ve gotno more ingredients to use so I’m justgonna run through very quickly how muchin quantities the peen and then I’mgonna edit it all together and you’llnever know we will notice I’ve just toldyou but you won’t know so quantitiesthen you’re gonna need for this sauceyou’ve already done the onions that’swhere it stoppedyou’ve already fired all that off so thenext thing you need to do is getyourself your bourbonand I say shot shot a bourbon thatyou’ll have to go in this one I’m havingbecause he’s been a long dayor that the hair is no jest you’re goingto need a heat teaspoon of smokedpaprika you’re going to do 100 grams ofbrown sugarI prefer Muscovado sugar because it’sgot more molasses in it so if you canget that then use that I’ve only usedthat because they used all the otherstuff up and that was all I was leftwith you’re going to need a heapedteaspoon of Dijon mustard okay and usingthis mustard if you want but I thinkthat’s nicer you need four tablespoonsof Worcestershire sauce you’re going toneed a quarter of a cup or 60 mil ofcider vinegar and you’re gonna need 200mil and a shot of the finest coffee thatyou can find don’t use instant if you’vegot beans grind the beans that’s thewhole ritual it’ll be way worth in theend get all that into your pan and as ifby magic still forgot the Somali ketchup470 grams of tomato ketchup really niceeh 470 grams is because when I was doingthis recipe making this recipe up thiswas the only one that I could get holdoff in that quantity it worked outperfectly so get yourself 470 grams andit will fine and once you’ve got it allin the pot as if by magicit should look something like that nowyou want to mix that all together makeit all lovely ee ee ee if you’re hot youyou must have you absolutely must have ahate on that so it blips away so itneeds to be bubbling on there for atleast 40 minutes I would say you want toreduce it right down it will be whenwhen it’s ready it’ll be able to coatthe back of a spoon like properly stirit all in give you 40 minutes go chillout have a beer smash a bourbon drinkcoffee and I’ll be back in a few soafter 40 minutes of ripping away youwill have a beautifully reduced barbecuesauce which coats the back of the spoonas you can see it’s delicious oh andthat is ready to decant into somethinglovely ready for your next barbecue Ilike to use this with them my ribs ifyou’re going to be cooking some ribs upright at the end just get these in thefoil and it just adds another level offlavor it goes with all barbecue reallythere there is a particular source thatI like for beef and lamb and things likethat called a tiger sauce which at somepoint I’m going to show you but yeahthat’s what it should look like thatonce it’s you know you can see that’sreduced right down and there we
