A strong first recipe by Quarantine Cooker Trey K!
Recipe:
1/2 onion minced
4 cloves garlic minced
3/4 cup bourbon
1/2 tsp ground black pepper
1/2 tsp salt
2 cups ketchup
1/4 cup tomato paste
1/3 cup apple cider vinegar
2 tsp liquid smoke
1/4 cup Worcestershire
1/2 cup brown sugar
1/3 tsp hot pepper sauce
1. Large skillet over med heat. Combine onion, garlic, and whiskey. Simmer 10 min. Mix in pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire, brown sugar, hot pepper sauce.
2. Bring to boil, reduce heat to med-low and simmer for 20 minutes.
Run sauce through strainer.

[Music]hey everybody hope you’re doing goodwe’re going to come on here today andwe’re going toshow you how to make homemade barbecuesauceand i call this sauce three um and sowe’re going to make barbecue sauceand i’m going to show you how to do itwe’re going to startwith three quarters of a cup of bourbonwe mix into that on medium heat our panis on medium heatwe’re gonna mix into that four garlicclovesminced four minced garlic cloves andwe’re going toone whole onion minced and we’re goingto mix that in thereon a medium heat and we’re going to letthatum kind of simmer for about 10 minutesand so we’re going to mix that aroundout some brand camera over herewe’ll mix that around in there um getthatnice and stirred up and then we’re goingto let that simmer for about 10 minutesand then we will uh we’ll catch backwith y’allall right so we’ve been simmering forright at 10 minutes with ourum first part of ingredients now we’regoing to add our next ingredients andwe’re going to adda half tablespoon or a half teaspoon ofblackpepper we’re going to add a halftablespoon of saltin our mix we’re going to add two cupsof ketchupinto itwe’re going to add two tablespoons ofliquid smokewe’re gonna add one quarter cupa quarter cup of worcestershirewe’re going to add a third of a cup ofapple cidervinegar and we’re going to addum i said how much is thiswe’re going to add a half of a cup ofbrown sugarwe’re then going to add a quarter cup oftomato pasteand then we’re going to add i like toadd a little pepper sauce hot peppersauce because i like my barbecue sauce alittle with a little bit of a kickif you don’t like it with a kick thendon’t do thisum but just kind of add as much as youwould like in thereum you can add a little bit more lateron down the roadum but add that what we’re then going todois we’re going to bring this to a bowlso we’re going to turn our heat up justa little bit we’re going to stirall all of this inmake sure we stir it all in there realgoodget the paste stirred inwe’re going to get this stirred all upand then we’re going to turn it up untilwe get to a bowl but it starts boilingwe’re going to reduce our heat to amediuma low and we’re going to let it simmerfor another 20minutes and so i’m about to bring thatcamera we’re going to floatthis is what it should look like whenyou get everythingin there we are going to strain this injust a little while after we get donewith it and it will be asauce but you see we got to a bowl rightnow so we’re going to reduce our heatdownand we’re going to let this simmerstirring it occasionallywe’re going to let this simmer foranother 20 minutes and sowe will see y’all back here in 20minuteshey everybody we’re back so we have letthis simmer and we’ve mixed all ouringredients inwe’ve let it come to a boil we reducedit we’ve let it simmer for about20 minutes and we’re going to turnour eye off and at this point you can doone of two thingsi like to strain it to get all the bigpieces out some people like thoseuh chunkier pieces and if you do you cango straight to bottling it or put it ina jari will talk about that more in just asecond butwhat i’m going to do you can see it herewe’re starting to get the form of abarbecue sauceum smells terrific um i am goingto first and foremosti’m not going to put my spoon on so idon’t make a mess now so don’t yellum but i’m gonna run it through thisstrainer right hereinto a bowlmake sure we get all of it in thereoh we don’t believe any of it we don’twant to get every bit of it it’s thatgoodall right so we’re going to raise thisupyou can see it kind of straining throughthereso this is going to take just a fewminutes to strain throughwe’re going to let this work i alwayskind of just run my spoonback and forth through it and give it agood little shake and let itlet it goso we’re going to let this strain and wewill be back with y’all in just a fewminutesokay so it takes just a few minutes tostrain it and so if you’ll see here thisi put it from the bowl um to a measuringcup it’s got a spout be easier to pourbut you get about two cups of sauce outof it i often show them that you seeum it’s strained there’s no big chunksof pieces in thereand so now becomes what am i going topour this sauce intoi’m going to throw you got a few optionsyou got your half pound which i like iprefer the half pipebecause it’s i just like it you got yourwide mouth jar if you want to be allum fancy and all cutesy and allwhatever you can do that you’ve got yourbig jar here um i don’t really likeusing this one it’s justit’s it’s too hard to deal with and thenyou got your squeezy bottle and i don’tknow really what the official name forthis is but i call it a squeezy bottlei’m perfect for if you are having peopleover you’re doing barbecue sandwichessomething like that put it in heresqueeze you knowwhat i’m talking about so we’re going topour it hereinto these two and i’ve got a fancyfunnel here and we’re going to pour thisinto our jarokay so we got one jar there now we’regonna go to our wide mouth jarlet that go on and just continuedripping out listen this sauce is sogoodyou don’t want to miss any of it thenwhat you doyou take your piece of loaf bread whiteloaf bread and you dip it in this asyou’re cookingi mean you have your little snack sowe’re being resourceful we’re in themiddle of the quarantineum having to stay at home sowe’re going to get back together andnext time we’ll get back together we’regoing to do a smoke a boston butt to usethis sauce with what i like to dois take the pieces the chunk pieces thatdrained outand i like to uh put a rub on myboston butt using this before i smoke itand we’ll talk more about thatwhen we get back together but here ishow to makehomemade barbecue sauce you all
