1/2 c chopped onion
5 tbsp butter

[Music]hey guys I’m Patti and this is a littlered southern kitchen welcome to mychannel today it’s gonna be a two-parterwe’re gonna have barbecue beef ribs inthe oven and I’m also gonna pickscalloped potatoes from scratch so firstthing we’ll start with is I bought thisbeef rib rack at Walmart it’s a littleover three pounds no it’s two and aquarter pounds and I’m gonna get up hereand I already got my pans prepared butI’m a close I’ll tear it open tosomething get this ready and then put mylittle rub on itI’m personal and welcome you out of mychannel if you’re new here please take alook around at my other videos I do alot of southern cooking but I don’tlimit myself to that and I think myinstructions are from everybody all thatwas a cook that subscribe button I’dlove to have you in the family myoven to 350 so all I’m gonna do for myrub is I’m just doing salt and pepperand garlic granulated garlic because allmy flavor is gonna be in my barbecuesauce which it’s not homemade believesorry alright don’t be stingynow if I can get it to come out probablynot so we’ll do it this waywell that’ll come out at leastyepall right I do want that fat side downand all I’m gonna do it this time I’mgonna tightly wrap it in foil and it’sgonna be in the oven for about twotwo-and-a-half hours but I will be backin about an hour and a half to getstarted on the scalloped potatoesbecause they too need about an hour tocook so I’m gonna try and put them allin the oven so let’s get this startedand we’ll be back shortlyhey guys I’m back and I’m getting readyto get stuff start from the scallopedpotatoes I had to dig and find that thiswas hidden in the back of my cabinet mymind I caught my scalloped potato dishall right for this dish you gonna needsome potatoes of course I’m using YukonGold and Tony’s gonna peel em and thenI’m gonna slice them up then on themandolin I’ve got an onion that I’mgonna mince up in the processor I’ve gotsome all-purpose flour salt and pepperand I’ve got some half-and-half but Idoubt it’s gonna be enough Susan I’vegot the milk all right I’m gonna get uphere and do get these potatoes and Imean ready we’ll be back thank God letme write a you need five tablespoons ofbutter – I’m over here at the stove andwe as you see and I’ve got my buttergoing on and what I’m gonna do it I’mgonna saute up my minced onion in herejust a little bit but this is our saucethat’s going over the scalloped potatoesnow I’m just making plain old simplescalloped potatoes I’m not adding cheeseI’m not an ham tooI’ll say those around they’re not gonnabe need much sauteing if they’re so sofine finely minced I love that littlechopper a mini chopper for thatnow I’m also at this time gonna add somesalt and pepper dip sorry you all up inthe grill againthat’s and at this time I’m also gonnaadd my five tablespoons flour I am thesean all-purpose and I’m just gonna stirit around a little bit kind of make it alight Roux but just kidding up flourtaste outthen I’m slowly gonna add in my milkI’m start with four cups because I’m notusing as many potatoes as they callbridal thing and all you want to do isfor this to thicken up a little bit thishouse is not good those ribs who this’llbe a good meal Tony actually had anearly day today because all this rainexcuse me and he doesn’t have to go inearly tomorrow so that’s why I decidedto cooking ribs in the oven instead ofthe instant pot talk about where y’allare but here in South Carolina oh we gotgoing on his reign rains every day is myreign for two weeks we did have a littlebit of rest of it for a couple of hoursone day I think but with this lazyweather it makes me lazy I don’t want todo anything all I want to do is sleep Ithink that’s why what’s been feelingreal well just because of this stupidweather with this meal tonight I’mhaving green beans and I think I got mysouthern card back because I got myseasoning meat in there got me someturkey wings smoked turkey wings youfind out I use a lot smoked turkey wingsbecause they’re just as good and they’renot as bad for you as the smoked porkbut I stood my pork too so I’m nottotally without Sam but it comes beforeeven them up dr. crosses at me becauseof my blood pressure this is likewatching paint dry I’ve got it turned upso I’m gonna let this thicken up andthen I’m gonna meet y’all back at thecounter and soon and we will build thisscalloped potatoes see in a minute okayguys now this isn’t gonna be thick likegravy it’s just sticking a little bitbut it will thicken up as it cooks inthe oven with the potatoes and I’m gonnaput half of these potatoes in here nowyeah and I’m up that no boy what I’mgonna make a bass half of this want itthen I’ll add the rest of tatersthen pour the rest of this on it butSarah go get me I’m sorry all right I’ma sickness in the oven uncovered it’sgonna cook at 350 for about 60 to 70minutes so we will be back shortly okayguys I got these out the oven and I waskind of a little disappointed they kindof shrunk up but that’s all right whatI’m gonna do now is I’m coating thiswith some barbecue sauce and my favoriteof course is sweet baby Ray’s sweetVidalia Onion but I’m gonna stick thisunder the broiler for a few minutes andjust let’s let that crisp it up a littlebit on barbecue sauce and we will bringyou back I’ll be getting the potatoesout in a minute toookay I just got my scalloped potatoesout and I’ll get ready put my my ribsback under the broiler but this willthicken up whenever it’s standing alittle bit so next time you see me I’llbe picture plate see you shortlyokay guys I’ve got my oven baked beefribs hopefully good they are tenderthough I don’t want to leave thissitting anymore I’m hungry I’m sure toget thicker but oh you got time for allthat I am
