Ingredients
Green Beans
· ½ pound green beans
· 1 tbsp olive oil
· 1 large garlic clove, minced
· ½ tsp Italian seasoning
· Salt and Black Pepper (to taste)
· 2 tsp softened butter
· 5 basil leaves
· ½ small lime juice (around 1 tsp or to taste)
Chicken
· 8 boneless chicken breasts (fillets)
· 1 cup water
· 1 tbsp salt
· black pepper (to taste)
· 1 tbsp granulated sugar
· 2 tsp olive oil
· Lime Juice
Raspberry Glaze
· 2 tbsp olive oil
· 1 sprig rosemary
· 1 clove garlic, minced
· 8 tbsp raspberry preserve
Method
Step 1: Trim the ends of the green beans and set aside.
Step 2: Bring a saucepan with water to a boil and add the green beans. Reduce the heat to a simmer and cook for 5 minutes or until the beans are slightly firm; remove from heat and strain.
Step 3: Transfer the beans to a dish and add 1 tbsp of olive oil, minced garlic, Italian seasoning, salt, pepper, butter, and chopped basil leaves; mix well.
Step 4: Heat a skillet on medium high heat and grill the green beans with a splash of lime/lemon juice for 3-4 minutes.
Step 5: To make the brine for the chicken, place 8 chicken breast fillets in a baking dish with water ,salt, black pepper and sugar; refrigerate for 2 hours.
Step 6: Remove the water and pat dry the chicken breast fillets with a paper towel. Add 2 teaspoons of olive oil and massage the chicken.
Step 7: Heat a grill pan on medium high heat and cook the chicken breast tenders until golden brown on both sides and cooked through. Squeeze lime juice on each chicken breast; remove from heat and set aside.
Step 7: To make the raspberry glaze for the chicken, heat a pan on medium high heat with olive oil. Add the rosemary and allow it to infuse in the oil for a few minutes. Add in the garlic and raspberry preserve; cook for 1-2 minutes.
Top the chicken breast fillets with the raspberry filling and serve with our grilled beans.
