hello chef Pierre with yet another videothis video is focusing on pepper this isa Jamaican Jerk spice blendthat’s one of my peppers here we haveblack peppercorns and right here we havegreen peppercorns do you know thedifference between black and greenpeppercorns leave a comment if you doI’m not gonna mention it until I getsome comments then I’ll tell you thedifference between these two so here’sthe video I’m doing a pulled-pork thisis a whole pork loin this cutting boardis 20 inches wide so if in corner tocorner it’s even a little longer thispiece of pork loin is over 20 inchesit’s big so I’m going to show you how tobreak it down real quickly and we’regonna do a of peppercorn barbecue pulledpork and pepper as you know helps boostthe immune system so follow along I’mgoing to work pretty quickly and get itgoing I’m using a boning knife and I’mgoing to remove some of this fat as wellas the silver skin[Music]youokay over here is my scraps here’s theclean pork I’m leaving the chain on aswell as some of this fat no big dealI’m going to cut this pork intoapproximately six inch pieces the piecesare going to make a little more a littlebit more manageable just like thisyeah there we golooking really good okay and now nextstep seasoning up this meat here so thefirst thing I like to do is I like tosalt my meat definitely want salt on thetop and the bottom get a lot of salt onthere salt adds a lot of flavor we’vegot to have it you got to love itokay trying to get as much of the silverskin off as you can without losing themeat okaypays to have a sharp boning knife let metell you okay so now now we’re gonna putthis peppercorn on here first thing I’mgonna do is use my Jamaican Jerk spiceon both sides and I’m gonna rub it inthat’s the reason we call it a rub rightthere you got to rub it in get it all inthere good generous amount okay bothsidesmmm-hmm that should be enough we’reusing quite a few different peppercornstoday okay so once I’ve got it rubbed inthere good yeah I mean it’s gonna lookjust about like this okay oh yeah nowthe green peppercorns they’re a littlesoft they basically get smashed rightinto the meat I’m just gonna smash themright inrub them right in uh-huh and the blackpeppercorns of course we’re gonna haveto use a pepper grinder get thosesmashed up real good and my peppergrinder use Oh for decades this oneright here okay and then put about maybe15 peppercornsblack peppercorns right in here allblended right up uh-huh okay so nowwe’re ready to sear this then it’s gonnago in the Dutch oven and slow cook okayI got a hot frying pan here I’m adding alittle bit of salad oil just want enoughoil to keep it from sticking god I havea good pair of tongs and once this ishot we’re gonna put a couple pieces ofthat pork in there okay[Music][Music]and you let it cookokay once it’s round please flip it overoh look at that color that’s what you’relooking for three cloves of garlicokay the last piece of pork is browningreally nicely put this garlic in hereand when someone gives me a cheap beerlike this one here you know what I dowith it oh I surely don’t drink it Icook with it so I take this beer and I’mgonna deglaze the pan just like that ohyeah it’s gonna be good huhand all that flavor to come off to thereyeah well okay I got this hot Dutch ovenready to go and what I’m gonna do isgive you a little chef’s tip hereanother little trick for you I’m goingto take this this Dutch oven here andI’m going to line it with celery that’sright celery sticks I want to put thisin here so the pork stays off the bottomand the celery is gonna end up goingright into my sauce anyway not too muchjust enough like this to cover thebottom we’re good right there and thenI’m going to take my pork each piece putit right in there huhstand these babies right up oh yeahwedge it all in there good just likethat okaypork is all in peppercorns are in Ohalmost almost forgot the garlic and thebeer reduction there yeah deglazing thatpan out really good that’s gonna be goodnow real simple we put the lid on thisDutch oven and we’re gonna slow cook itin the oven 300 degrees for about twohours I’ll be backoh yeah look at that so now this porkwe’re gonna check it with the pop forksee what it’s like here uh-huh that’sjust what I’m looking for nice chunksthat come right off right thereof course the sauce we’re gonna reduceit down and make a really nice barbecueI just wanted to show you how soft andtender this was after just a couplehours and this loins gonna make a greata great pulled pork barbecue yeah staytuned to the next video thanks forwatching like share subscribe oh yeahthat’s gonna be good right there uh-huhokay so to finish up this pulled porkI’m going to shred each piece like thisvery quickly it shreds really reallynice and easy oh yeah uh-huh you can seethat really really nice one of the nicethings about using a pork loin like thisis its large pieces and it’s just fastand easy it’s also much leaner and lessfatty than using the shoulder oh look atthat so good so fastso easy I do like to leave some largechunks myselfthe saucegonna be a very unusual barbecuesouthern style southern USA so I’ve gotabout two cups or so of the juice it’sgot a little bit of pork flavor porkstock in there some of the beer thegarlic all that other good stuff I’vegot a two-pound can of tomatoes and I’llput in half the can of tomatoes it’sabout a pound a pound of tomatoes thereyeah okay the next thing I’ve got is aliquid small club this stuff liquidsmoke is great flavor and I’ll put inabout a teaspoon of liquid smoke it’sgonna season up this whole big batch andmake it really really good of course yougot to have some sugarso in this recipe I’m going with a cupof brown sugaruh-huh mix all these flavors together ohyeah I’ve got one more unusualingredient for you yeah it’s lookingreally really nice there unusualingredient what I’ve got here is 1/2 acup of maraschino cherry juice it’sgonna do a few things it’s gonna turn areddish right-right red color if youfind been used in barbecue variousrecipes it’s also going to add a quite abit of a sweetness factor and a littlebit of natural cherry flavor yeah okaythat’s looking good that’s a thinbarbecue sauce exactly what I’m lookingfor because this is gonna be heated upagain tomorrow or the next day as it’sused so I want to dissolve all thatsugar get it mixed in goodoh yeah it’s time for a tasting see whatwe got hereoh yeah okay I can tell right away acouple of things I liked a little moregarlic I’m gonna go a little bit ofgranulated garlic uh-huhlike that a little more salt another -for this liquid smoke it tastes good Ijust like a little bit more uh-huh therewe go mix it up oh yeahthat right there is southern barbecue ohyeah now I’m going to do one lasttastingyeah that’s it right thereoh yeah nice little blast from all thosepeppercorns and now I’m gonna put allthis pork right into the sauce and we’regonna heat this up as needed and then alittle reduction in a frying pan andmake some awesomepulled pork sandwichesyouokay it’s the next day I thought I’dshare this with you this is my barbecuepork looking really goodI’m gonna put just a little bit of it ina hot frying pan oh yeah huh it’s gonnabe goodwant to show you how I’m going to servethis put it right on the plate besidethis awesomelettuce I’m going to add some
