Just a guy using an InstantPot, a mixer and a slicer while patiently waiting for car parts during COVID-19 shelter in place.
BBQ Chicken Bacon Wraps
2 pounds boneless chicken breast
1 oz cooked bacon bits
1/2 red onion chopped to preference
1-Cook chicken in InstantPot on High Pressure for 5 minutes per pound. Quick release
2-Preheat oven to 400*
3-Chop onion and layer in bottom of oven safe dish.
4-Sprinkle bacon bits over onion
5-Slice cooked chicken in 2 inch sections and remove unwanted bits (fats and such)
6- Place sliced chicken in stand mixer. Mix to desired texture.
7-Pour 1/2 to 3/4 cup of chicken broth from InstantPot into oven safe dish with onions and bacon.
8-Add BBQ Sauce to taste.
9-Add shredded chicken…layering some BBQ sauce and bacon, as desired.
10-Cook/marinate in oven covered until liquids bubble and onions turn translucent.
11-Serve on tortilla with cheese and lettuce.
