hey guys welcome to mad scientistbarbecue I’m Jeremy Yoder today I’ve gotnine racks of ribs I have nine differentrubs to use I’m going to answer theultimate question of barbecue what isthe best rib rub to figure out whichwould be the best contenders for the ribrubs Arvind manager here at the barbecueHQ helped me pick these out he’s got alot of experience with the rubs and hepicked out some of the real winners forus so what was your thought process whenkind of selecting these I wanted to giveyou a nice variable from all of the rubsthat we carry so one from each companythat way we can showcase what I believeis the best rub got it so we’re gonnaget different kinds of flavors but thebest kind of in each category yes okayperfectall right I’m excited so at this pointwe’re just going to trim these ribs upwe’re going to score the membranes onthe back I’m going to season them withthe corresponding row[Music][Music]youall right we’re all seasoned up here andmost of the rubs have kind of a reddishcomponent maybe from the paprika orsomething like that a couple of themlike the Dominator rub and the hogWaller don’t have very much red in themand obviously the salt pepper doesn’thave red in it either but we’re going toput them in there we’re going to labelexactly where each rack of ribs is so wecan keep track of it we’re not justrelying on memory and we’re going to letthem go for about three hours on thesmoke[Music]all right these ribs have been on forabout four hours now and they’ve gottengreat smoke flavor we’ve been cookingabout 235 degrees and where they are onthe cooker there’s only about you knowfive to ten degrees difference from oneside to the other so it’s prettyconsistent so that’s what we wanted sowe’re gonna wrap them put it back in theexact same order so we don’t lose trackwhich one is which and we’re gonna usefoil and then we’re going to keepcooking at the same time if we mightbump it up to 250 from 235 but we’rejust trying to get them nice and tenderand anything that’s kind of gotten maybea little too hard we’re trying to softenup so we have delicious ribs the wholeprocess of cooking the reason we usedunwrapped at first is because we wantthat smoke flavor to accumulate on theoutside and we want the fat to renderit’s a very very important point getyour fat to render that’s gonna make ajuicier rib in the end so at this pointthrowing in the foil but before we wrapthem up we’re going to spray them withsome apple cider vinegar then we’regonna seal that put it back on thesmoker and cook them until they’retender we’re not worried about time atthis point which is worried about feelso when the ribs start to break when youpick them up you know that they’re doneor if you poke it with a probe and itfeels like butter you know they’re doneso we’re gonna get these on here get aback in the cooker and we’ll show you ashot of those ribs before we wrap themall up to see the kind of color and thedifferences in color based on how muchsugars in the rub or how much paprikaand things like that we’re gonna getthese guys back on there and get themfinished up yeah look at that we shouldget a shot of this dude this smellsamazingheregreatis not greatone important note about rapping alwayshave the meat side facing down becauseyou want all the liquid to pool thereand soften that meat up as much aspossible soften up that bark meat sidedown on the roundall rightI like this one you know the weird thingis when you do it so many times youdevelop like a technique that you repeatover and over again without eventhinking about it like if somebody askedme how do you wrap the ribs I’d say Idon’t know it’s crapso when I do it I realized I do itexactly the same waythank you are these look okay these arewinners this bottle though is not awinnerit’s a loser quite frankly it’s theworst bottle I’ve ever seen thank yousir I will trade you quite welcomeoh yeah which one is thisJeanne’s Trinity from simply marvelousI like this but but but look sorry wasthereI’m never said about it let’s keep aneye on those guys yeah yeah those aremore done than anything elseI don’t know why ones in the back sideof the cool dude dude these though theseare gonna be my favorite I can tell youright now the thing is I think when yousome more barbecue you like just simpleryou like to keep it I don’t know why Idon’t know if it’s one of those thingsit’s like a phase I remember I’ve got 21I got really new craft beer and I wastrying to drink the hoppiest hopper beerthat ever existedtastes like pine resin and then Ioutgrew it it’s fine but not for studenthops anymore so out enough that Sethdays maybe I’ll go back to being likecongressman as well[Music]we got all of our samples of ribs laidout here and arvind pointed somethingout to me that i didn’t really thinkabout before even though these lookstotally different when we put the rub onin the beginning they’ve all come out toabout the same colormaybe the honey Chipotle Killer Bee is alittle darker and the backdraft is maybea little darker but even just the saltand pepper has a deep mahogany colorjust like all the others so in terms ofcolor I guess would be putting realsmoke on your ribs you don’t need tohave color additives in the rub itselfso if you’re putting paprika in therefor color and nothing else then maybeit’s a waste of time but we’re here notso much about the color we’re here aboutthe flavor and so we’re gonna go one byone down the line and gonna try them alland give you our impressions this isn’tabout tendernessit’s not about moisture because ifthat’s often I screwed it up but it’sabout the taste that we get on theoutside of the meat my guest and my biasis we’re going to get the most flavorwith the salt and pepper in terms ofsmoke and the more tiny particles in therub there are the less smoke flavor willcome through maybe I’m wrong but we’regonna find out so here we go we’re goingto start off with salt and pepperI get a lot of smoke coming throughI’m really simple flavor to pork flavorof smoke a little bit of salt and somepepperyeah it’s not complicated but no no yeahthis is my favorite way to eat ribsmaybe just a light glaze on top but yeahI’m super biased on this this is myfavorite way but I’m willing to try allthe others I don’t every bite – just cuzI nominal of this Oh bummerclean bone underneath you know you didright oh yeah okayI’m gonna give you 20 score okay okay soI just decided I’m gonna give each one ascore in terms of flavor for me lookslike a 9.5 that’s exactly the flavor Iwant on the rib and when I cook it whatdo you give it oh you’re not gonna hurtmy feelings but I’ll give you an eightand I saw I like salt pepper butsometimes I do like you know throwingsome different yeah totally touches onthe beauty of barbecues you can do ithowever you want to do it even if youwant to do that the white Randy does youcan do it that way toobut however you like it that’s the wayyou should do it number two is theOakridge dominator sweet rub whoo okaywe definitely catch the sweet I’m notgetting nearly the the clean you knowclear signal of smoke that I got on theother this is still good you still casesmoke I like the sweetness I actuallywish there were a little bit more salt Ithink so I agree I need it more saltyeah flavors really good though anotherflavor really happy with it a littleclean bite through nice hmm we don’twant it to fall I just keep eating Igotta stopokay so we don’t want it to fall apartbut we want a clean bite and what thebone to be clean underneath so patmyself on the back I did okay on thatI’ll give it a an 8 – 8 – I like thisweek I like the clear signal to smokethat I give a song pepper I’m gonna beokI mean your edges to me I know I thoughtit was gonna be more flavor and it justwasn’t there for me it didn’t you knowwhat I think you’re right I think you’reprobably closer with the scoreI just wanted to trash him maybe Ididn’t have enough something like thatbut not a ton of flavor there just kindof mutes everything it seems like thereis some sweet but I wish they wereeither more sweet or more salt orsomething I think a little bit of both Ithink we wereyeah a little bit a little bit more yeahokay number three is actually one of myfavorites it’s simply marvelous geniesTrinity marvelous genies turn into yogabut better oh you can taste the flavorinstantlymore flavor for sure okay I think I wasreally good I like the flavors that youget with this yes a lot more but again Idon’t get the clear signal of smoke yeahokay you know for me I love the smokeflavor and that I would count against itbut in terms of all the spices that theyuse in the rub they all come throughit’s not like it’s muted everything it’slike Oh boom boom boom boom boom spicepie spice yeah the only thing I’mmissing is the smoke I would give thisan eight seven I’m gonna do nine rightyeah that was good I wish you know likeyou said they just amuse the smoke butyeah it’s still a flavor instantly yeahthat’s good that’s good I mean I doubtthat anything is gonna be bad but it’sjust all personal preference yeahexactlyokay what’s number four number four isthe pits and spits ultimate rib rub ohokay I’ve had this one before this onewas I’ve never had this one just thepepper flakes and they’re like yeahactually you could tell this one even ifyou didn’t have everything written downbut look at the shotI like this one to me this is reallysavory you get a lot of savory no butyou know um I don’t know if it’s garliconion pepper that you know I just reallylike thatI think this is my favorite of the ofthe rub so far I like it a lot I’ll tryto be good take one bite what do yousquirt mutinied I got 8.9 no man ughthere’s another one of my favorites andactually for our shop it’s probably ournumber one seller is the sucker Buster’shog Wallerwell the name gets a 10 and a 10 let’stry the rib oh there’s something likechilies in there he’s like a little bitit’s not hot but no you just you kind offeel it it doesn’t it doesn’t pick it upit just it’s not thereooh yeah that’s good that’s good shewatch our number one seller yeah that’sI got a stop I’m gonna be full buddy inI’ll give that one a nine I’ll do nineone five nine nine five yeah it was goodokay all right that one very tastyokay number six number six is meatchurch holy voodoo this one I just neverhad it yet I know it’s more of a Cajunflavor so I’m ready to give this a trydang here we go that’s a differentflavor profile than everything elsewe’ve tried so far I I wish I were smartenough to know exactly what it is butit’s uh after you take that first biteyou get a nice little kick at then Ilike that I think it’s an appropriatelevel of sweetness – oh yeah I think Ilike how sweet it isI wouldn’t want it sweeter I wouldn’twant it less sweet I’m really impressedboth really good yeah okay I’ve beenmissing out yeah I made you respect ninepoint two I wonder nine point five allright okay this has been my favorite ofthe rubs so far this is cosmos use honeyChipotle killer beansI dunno I left Chipotle and I do lovemoney let’s find out if I love honeyChipotle killaby it’s kind of the sameas the Oakridge yeah it feels likeeverything’s just kind of muted out yeahI don’t know why I’m just not getting aclear flavor here clear flavor here iskind of all mmm yeah turns into gray Idefinitely agreeI go six five six five okay that’s areal bummer for me I was really lookingfor that memory is a code three backdraft sounds dangerouswhoa 20 here in Simi Valley it is Ithink it’s for me it’s kind of muted Ithink it’s definitely better than thelast one the honey spoil a killer beeagree um I get a little bit of likechili heat yeah that I like but for someof these it was like kind of fireworkswith spices going off this is kind ofyou know just I don’t flattenseverything out so you don’t get clearflavors here and there there’s kind of ayou can now kind of like just not eatingit you can still I can still taste alittle bit of fight like gentlemen Ilove spicy so I like that part of it forsure oh yeah um I wouldn’t be sad ifthat red no but we gave this one a sixfive I think for the back draft I’d giveit a seven three one two seven sevenyeahall right last one carry cube pork rubinto a Caribbean style seasoning thenyes all right get some sweetness suregonna be funny they just took a dumpright you definitely got flavor likeinstantly yeah we get the flavor myfront is it sweet it’s nice I think it’sbetter than the previous two yes I wouldagreeI’ll go 8 – I’ll go hey and it’s a goodrap if you like that flavor profile thenthat’s great now here’s the real testI’m gonna take a bite of the first oneand still see if I I think it’s as goodas it was there we goyeah just bloom smoke that’s exactlywhat I like in ribsyou know to me the perfect crib is asalt and pepper red cooked a tendernesslaced with sauce then you get thesweetness from the sauce you get thepure smoked flavor you don’t haveanything covering up all the surface toabsorb smoke so I’m admittedly totallybiased and this is already my favoriterib so this may it not have been a fairplaying field here but yeah to me thisis tilde way to go I want to change myscore in the salt and pepper to after atriangle me going back it’s I’m notgonna lie it was pretty good I thinkwith some water some sauce I think yeahbecause I think then you have all thesavoriness there plus some sweetnessyeah and then to me that’s how I eatribs but I was most impressed with theholy voodoo yes the the hog Waller Ithought also very good the pits andspits those three these are kind ofright in the middle yeah I was veryimpressed with especially the holydoodoo I might buy a bottle of thatbefore I leave most disappointing to mehoney Chipotle Killer Bee I thought thatwould be the one I like the most yeahand it just kind of flattens all theflavors down but you know everybody hastheir own preference and to me youalready know what mine is but I hopethat you know our opinions on this anddoing this test helps you make adecision about what rub is best for youand there’s no substitute for going outthere and trying it you can’t buy everyrub in the world
