Grilled Chicken Teriyaki Rice Bowl

Ingredients for
Homemade Teriyaki sauce
1/2 cup light soya sauce
1/2 cup brown sugar
1/2 cup Chinese cooking vinegar / wine ( Shaoxing) – don’t panic if you don’t have this
A good substitute will be apple cider vinegar
1 1/2 tsp grated ginger
Method :
– For the teriyaki sauce, heat the Chinese cooking wine , soy sauce , brown sugar and ginger in a small saucepan over medium heat. Bring to the boil, then simmer on low for 3-4 minutes or until the sugar dissolves. Set aside until ready to cook
– This will make around 1 cup Of sauce .

Ingredients for Garlic Stir Fried Broccoli
150 Gms Broccoli , washed and cut into florets
2 tsp finely minced garlic
1 tbsp oil
Method
– Boil broccoli florets in boiling water and salt . Do not overcook the broccoli to maintain its crunch and green colour .
– Heat a pan , add oil , fry the mince garlic till light brown and toss the broccoli. Add salt pepper to taste . Please reminder to prepare this dish on high flame .

500 gms of boneless chicken – preferred will be leg boneless ( it’s much more moist and flavourful than chicken breast , but not easily available ) so today’s we have chicken breast .
Salt and pepper to taste

Method for panfrying chicken / skewers
– Heat a large non-stick frying pan over medium heat. Brush the pan with a little oil. Cook chicken skewers or flattened chicken breast 2-3 minutes each side . Brush chicken with a generous amount of teriyaki sauce. Turn and brush the other side. Keep turning and basting chicken until sauce thickens and chicken is cooked through.
– Transfer skewers / chicken breast to a plate . Let the meat “ rest “ for 5 minutes . This is an important step .
– If you immediately cut the cooked piece all it’s juices will flow out . “ Resting “ the meat allows the juices to remain in and keep the chicken moist at consumption
– Cut the chicken breast up as shown in the pics / video or place the skewers on a bed of rice . Drizzle extra teriyaki sauce and Top it with spring onions and sesame seeds .

Steamed rice

Garnishes
White roasted Sesame seeds
Spring onions ( green part finely chopped and white bulb part , cut lengthwise and kept in cold water to curl up )
