hey folks welcome back today we got afun cook plan we’re gonna cook some beefshort ribs and we’re gonna also try togrill some cheesy corn I’m gonna cookthe ribs over pecan wood on the 18 and1/2 inch where ever Smoky Mountain I’mprobably gonna go 8 to 10 hours and I’mgonna cook the cheesy corn and acast-iron skillet on the kettle grillI’ve never cooked cheesy corn before Ihave no idea and turn out it’s gonna bean experiment we’re gonna see how itgoes as far as my my rub for the meatgoes I’m using my traditional brisketrub but I don’t have a whole lot left ifI don’t have quite enough for all 6 ribsand on a switch to a commercial rub fromthe uppercut it’s they’re fine steakseasoning rub the ribs are from theuppercut you’ve heard me mention thembefore it’s a meat market up here in myarea in Kansas City you have the qualityof the meat is wonderful and thecustomer service is great if you’re inthe area check them out so I’m gonna goahead and get the ribs prepped I’vealready got some salt on them I want tomake my own rip my own rubsI always omit the salt because then Ican salt it to my taste beforehand andput as much rub as I want on the meatwithout affecting the salt level so I’vegot the salt on there all that’s left isto get them rubbed up and then I need toget the smoker fired up get them on thesmoker so let’s let’s get this going tosear these turning up turn out I’ve beenlooking forward this cook all week allright the charcoal is pretty much raisedready to go I’ve got the smokerassembled the meats ready to go I justhave to get everything loaded and get itgoing so let’s get started[Music]got two small chunks a hickory to gowith or pecan to go with here we havethrow those on and then get the smokerassembled and start cookingand with that we are good to go but it’sgot to sit back and wait for anothereight or ten hours than we’ve done I’mgetting ready to start prepping thecheesy corn now we’ve got corn of coursea little bit of sugar we got some milkand water pepper jack cheese buttercream cheese and a little bit of whitepepper this was not in the recipe Ifound but I like white pepper we’regonna give it a try so still head andeverything mixed up I’ve got the grillstarted the charcoal is going justwaiting flat to heat up so I can putthis on the grill at this point the ribswere on the smoker about six hoursthey’re coming along nicely it’s tryingto get this done about the same time asthe ribs go ahead and get everythingmixed in here together and geteverything set up I am using butter fromthe refrigeratorit’ll get cooked down the on the grillof course no big deal so I’m not worriedabout it all this stuff’s gonna getcooked down and we’ll go ahead and mixit all up while it’s cooking on thegrill right now I’m just trying to getit all put togethernext in like I said this will cook downon the grill and we’ll get it mixed in alot better once it’s warmed up and up totemperature on the grill I’m not tooworried about it in here go all rightthe only thing left to do now is getthis on the grill and then we wait untileverything’s done all right our grill ismore and hot enough to go ahead and getthis cheesy corner on going though thecheesy gone on and let it go I think bythe time the cheesy corn finishes up theribs will also be done so we’re justkind of trying to pull everything offonce and call it a daywe are running a little over 500 degreesin the grill right now so that’s moreand more enough for this which is greatso we’ll go ahead and let that go for afew minutes come back out and stir it upand check on it and see you a rat allright we’re finally finished to cook wegot the beef ribs here and the cheesycorn over here I have tried the cheesycorn a little bit it’s okay we’re gonnasee after the meal exactly how good itis I just had one little bite it’s aboutthree o’clock now overall that cook tookabout seven hours I was expecting eightto ten so I was still right in theballpark so we’re gonna go ahead andhave some early dinner and I’ll let youguys know I got exactly what I thinkonce we’re all done so I had a chance tohave dinner taste all the food the beefribs came out really well there itcooked just about perfect the rubs I usetasted well on on the ones I ate thecheesy corn came out a little overdone Iprobably should have pulled it from thegirl grill a little earlier it tastedgood but it was definitely a littleoverdone I think if I put it in the oventhat had been you came out just aboutperfect so overall a pretty successfulcook I learned some lessons with acheesy corn for next timeit’s something I do again I’m not sureI’d do it on the grill again but it issomething I’ll probably try again in thefutureoverall it was a really good cook I’mlooking forward to smoking again nextI’m not sure what I’m gonna do next I’mthinking maybe pork ribs but we’ll seeso if you enjoyed the video hit the likebutton and please subscribe to thechannel that helps new viewers find thecontent thank you
