knowwhat you think so a few videos ago I didsome Texas style ribs out on the smokerhit them with some salt and pepper it’sa good post oak smoke and that’s allthey needed they turned out phenomenalso today I’m gonna be taking those sameTexas inspired flavors and applying itto a seven pound turkey breast that Ifound in the freezer got it thought outa few days ago and it’s ready to go solet’s get this thing seasoned up we’regonna be doing this out on the web orSummit charcoal grill today again saltpepper post oat smoke that’s all we needso follow along let’s get it okay hereit is this is a seven point three Ithink seven point three pound turkeybreast all we’re going to be doing isgetting some seasoning on this and it’sready to go the first thing you want todo is get it out of the package and Patit dry I’ve already done that so justtake a couple paper towels and go allthe way around it and make sure it’s asdry as you can get it the good thingabout these is there’s no trimmingreally do have a little bit of extraskin here I’m gonna take that off andjust go around and see if there’sanything else that needs to be taken offthis right here is just going to burn sowe’ll get that taken off as well andflip it over this side we have a littlepiece here that looks about like allthere is to take off so we’ll get thisout of the way and just think seasonedthough once you have this dried and youhave it trimmed up as good as you wantit we’re going to get a binder on thisnow you can use several differentbonders you could use olive oil mustardI like to use for turkey and chickenjust some canola oil spray and you don’thave to go heavy you’re just wantingsomething for the rub to stick to justgo over you know once or twice just likethat’s plenty in my previous video I hadmade up some of this Texas style rubit’s mainly salt pepper we’ve got a fewother thingsin there like garlic and onion so we’regoing to use that today to season thisup now the first thing I like to do isget the inside just hit it pretty lighton the inside just to get the flavorsall throughout turn it over and seasonthe outside and that should be it that’sall the season and you need you don’thave to go very heavy with this that’sthat’s how simple this is that’s supereasy to do everybody has salt pepper intheir kitchen so we’re gonna let thishang out in the refrigerator while weget the grill going so let’s get outsideand get that fired up[Music][Music][Music]all right we’re out here at the webersummit charcoal grill we’ve got it firedup at about 275 got the Post Oak smokegoing we’re going to put the turkeybreast on here just like that it shouldstand up on its own and today I’m goingto be monitoring the temp with thethermal works dot thermometer so we’regonna stick this in the thickest part ofthe breast here and that should be itwe’ll check back in about an hour on it[Music]all right it’s been about an hour sowe’re going to open it up and see whatit looks like you can see it’s startingto darken up a little bit it’s got somegood color you can really see the pepperflakes looking really goodso I’m gonna let this go right now theturkey breast is sitting at about 110degrees internal temperature I’m gonnalet it go till it hits about 1:30 andthen I’m gonna get it pulled out and putin an aluminum pan full of butter andthat’s gonna make this thing really goodso we’re gonna close it back up and letit go for probably another 30 minutesthere’s been about 30 minutes so let’ssee what it looks like now you see thatreally nice colorit’s nice golden-brown peppers startingto look really good you got a good cruston it temperatures about 135 so I’mactually gonna get this pulled off andwe’re gonna actually be easier just tomove it to the side like this I’ve got apan with two sticks of butter chopped upinto about tablespoon sizes we’re gonnaget the turkey moved over I’m gonna flipit upside down so it’s the the meat partis actually laying in the butter sowe’re gonna leave it just like that andthen we’re gonna get it wrapped in foil[Music]make sure it’s good and tight what’sgoing to happen is that butter is gonnastart to melt and kind of base the meatit’s gonna make it really nice and richso we’re gonna let this go until it’sdone so next time you see me we’ll be inthe house we’ll get it sliced up alrighthere we are this is what we have totalcook tom was about 30 hours you can seewe’ve got a good color on this the blackpepper looks really nice it’s got a nicebark on it the butter really made thisthing look amazing it really darkened itup a lot this is exactly what I wantedlet’s go ahead and tear you into thisI’m gonna slice off a few pieces fromfrom one side and we’ll give it a trythe easiest thing to do is take a goodsharp knife you want a longer knife likea slicing knife of some kind and you’regonna want to go at an angle here sowhat I like to do is just start up hereat the top and start off with a reallyshallow cut that’s gonna give you nicethin pieces now I like to do thesepretty thin that way you know you canmake sandwiches with this or you knowjust pick it up and eat it goes reallygood with like mashed potatoes maybesome green beans so we’re gonna get thissliced up and we’ll give it a try sostick around this for a few more minuteslet me get this cut all right there wego we got a big pile of Turkey here skinlooks really good you can see the blackpepper flakes throughout so I’m gonnatry this out and see what it tastes likeI know it’s gonna be awesome get one ofthese pieces with some skinjust try that out sweet that looks likeit’s really good[Music]you really taste the the salt and theblack pepper in the post oh it’s not toomuch smoke it’s just the right amountthis couldn’t have turned out any betterI love doing simple recipes like thisand the best part about this this isgonna make some awesome sandwiches forlunch this week a quick recap on what wedid we’ve got a seven pound turkeybreastgot it seasoned up with salt pepper putit on the Weber summer travel grill withsome Post Oak smoke we let it ride forabout an hour and a half got some goodcolor on it put it in an aluminum foilpan with two sticks of butter thenwrapped it in foil and that butter madethis basically made a butter bath in itsuper-rich kept some moisture in it whenit hit 165 pulled it off the smoker gotit in the house and let it rest forabout 30 minutes I did some really thinslices that’s how I like to slice myturkey and it turned out greatif you got a turkey breast lying aroundin your freezer and you don’t know whatto do with it give this recipe a
