[Music]fire in the hole let’s cook some countrypork ribs stay tuned hello and welcomeonce again in my backyard what I gotgoing on for you today is I’ve got thesethey call these country pork ribs butthey’re not really ribs and they’re notreally I don’t know how you call themcountry they’re just the pieces of porkshoulder cut from the shoulder into likethe shape of ribs and what I’m going todo is cook them in the pit barrel as ifthey were ribs and then I’m going tobraise them in a braising liquid thatwe’re going to make but first what wegot to do is what we always do Saengstir fry oil that’s my binder I alwaysuse sangs stir fry oil I used to useother binders mustard and stuff but Ifound that you just can’t beat thewonderful flavor of Sanks stir fry oilit’s got a garlic infused oil and it’sawesome and what the other thing I’vegot to show you is this this is fromhappy-ending foods the rub down rub thison your meat it says and the guy thatgauges to meet it to evaluate thingsSteve I asked my said can I give a a jarof this away to my one of my subscribershe said sure so I’m gonna put this onthe porkit’s got its got more sugar in it than Iwould like in a rub to be honest withyouit’s got its got the main ingredient issugar but it looks like a nice rub we’regoing to try it on these pork ribscountry ribs and if you want to try adrive for yourself it’s got a nice colorit’s kind of delicious flavor I put someon some chicken the other day and it wasreally good it’s just it’s kind of sweetso you wouldn’t want to put it on abrisket but it would go good on ribs orpork or chicken anything that you don’tmind having a sweet rub on because it islike I said mainly sugar that’s the mainingredient sugar salt pepper otherspicesit’s got some nice color to it doesn’tit make some ribs look pretty nice sowe’re gonna get those ribs rubbed downwith the rub down the rub down thehappy-ending rub down rub this on yourmeat it says the label I’ll tell you thelabel is funny it’s a really cute reallycomical anyway I’m gonna rub both sidesof those and get them into pit barrelthen I’m gonna use this rope to make abraising sauce and we’re gonna braisethose to get them really soft and tenderso let me get them in the pit barrelI’ll get them smoking I’ll show you whatthat looks like so stay tuned I gotthose country ribs in the pit barrelcooker they’re smoking up real nice thatrub is putting a nice color on them thatrub down rub and we’re gonna get them toa internal temperature of 160 and we’regonna get them off there embrace them tomake them really tender and mysaucepan and we’re gonna make a verybasic barbecue sauce gonna use as abraising sauce I’m gonna tweeze it up alittle bit you know root boy style thefirst thing we need is a cup of ketchupregular old catsup about a cup of catsupin there that’s about a cup that’s goodstuff catsupthen we got some grandma’s molasses weneed about a half a cup of that and Ihad a devil of a time finding molassesin this town everybody’s you know shutin their homes because of the virus andthey’re all doing baking so about 1/2 acup of molasses and about 1/4 of a cupof apple cider vinegar a little bitapple cider vinegar now that’s yourbasic barbecue sauce right there youcould if you wanted to you could usethat as a barbecue sauce but we’re goingto going to take this up a few notchesquite a few notcheslet me tell you what they get thatstirred up a little bit we’re gonnabring some sweet heat to this we’ve gota diced up jalapeno pepper that’s gonnabring a little bit of heat to thatbarbecue sauce and you know I love thatstuff that’s good stuffI just touched that jalapeno and scratchmy ear and my ears should be on fire inabout one second anyway we get thatjalapeno in there then we need a littlebit more heat I’ve got some crushed redpepper I’m gonna put about a heapingtablespoon of crushed red pepper inthere because I want to bring some heatto this barbecue sauce about that muchcrushed red pepper get that stirred inthere get this cooked up a little bit ohyeah now we’re talking now we’ve gotsome sweet heat rocking in there but nowe’re not done we’re gonna put some Igot some Connie Sh Barbados rum youremember I use that last week tomarinade that chicken and it’s goodstuff let me tell you what we’re gonnaput about a cup of Kennish rum in therenow smoke got in my eyes I might haveput a little bit more than a cup of rumhope not anyway that’s good stuff andthat’s what we’re gonna we’re gonna cookthat into that barbecue sauce or onemore thing I got to put in there andthat is some of this happy ending rubdown the rub we’re going to put about aheaping tablespoon of this in there getthe cover off it so I can get it out ofthere this is good stuff it’s got sugarand salt and pepper everything you’dwant and your seasoning I just put quitea bit of that in there that’s gonna beokay I think that’s gonna be all rightthat’s fine Steve I I know Steve’swatching I hope he likes this what Idone with it is rub I’ve turned his rubinto a sweet hot sauce that I’m gonnause this to braise my my ribs I’m gonnacook it down a little bit but not toomuch because I want it to be you know alittle bit loose like that although youcould cook this down a lot into a like abarbecue sauce and you know use it to uhuse it as a barbecue sauce but that’snot what my aim is my aim is to braisethose ribs with this so I think I goteverything in there I wanted to get Igot the rub the hot pepper the jalapenosthe rum got a rum flavored hot sweetbarbecue sauce and like I said we’regonna use that to braise the ribs sostay tuned I’ll show you what that lookslike on my pork country ribs are at 160degrees so what I’m gonna do now is takethat braising liquid then I made andpour it on them and that stuff tastesgreat it’s got a sweet heat that’s aexcellent beautiful wonderful I can’tsay enough good things about this thisrecipe with one of my best right here asweet heat barbecue sauce kind of abraising sauce we just want to get itabout half way upmeet like that I guess I’ll just pour itall on in there we’re gonna cover thatin foil and put it back in the pitbarrel until we get an intern atemperature of about 200 on those aboutanother hour I think and then we’ll getthem off there well plate them up we’lltake a taste and drink a beer so staytuned ladies and gentlemen the frostyroot boy mug and here’s today’s beerfrom the knee-deep Brewing Company finecraft beers slow mo 100% mosaic hopped6.5 percent alcohol and of course it’san idiot Pale Ale it says this lightbodied single hop mosaic IPA is burstingwith aromas of ripe summer berriescitrus and passion fruit flavorfulenough to sip smooth enough to crushlet’s crush it Rob what do you thinkbaby let’s pour one out let’s pour oneout for the Gipper oh man I can’t waitto tear it to these ribshe’s country ribs with that that rub onthere and those that sauce is amazingit’s nice and sweet heat yeah anywherethere you go knee-deep Brewing Companyit’s an IPA with passion fruit andcitrus flavorful enough to sip Rob let’ssniff the sniff out of it baby thatsmells great smells like an IPA shouldyou know I love a good IPAlet’s quaff the
