all right you guys welcome back to thewiki kitchen today we are going to makeit an absolutely delicious kick-assspicy sweet and just such a versatilesauce this is one of my favoritebarbecue sauces make sure you guys staytuned you don’t want to miss this one[Music]all right so we’re gonna make thisbarbecue sauce I love a good sweet andspicy smoky barbecue sauce all right sowhen it comes to barbecue just like alot of different sauces and flavors thatwe actually put together when when itcomes to flavor building you you look atit as a formula okay so first you wantto choose your base you can use ketchupwhich is kind of a cheat which is what Ilike to do in this case it’s gonna be avery quick barbecue sauce you can useketchup Derek hates ketchup so they’llnever use ketchup and if you didn’t knowI really do not like ketchup but you canuse ketchup you can use tomato paste youcan use fresh tomatoes you can use beetsyou can use other vegetables in therecook down as the base and I’m usingsweetness that has a richer depth to itokay rather than using agave or sugarI’m gonna use more of a molasses and abrown sugar okay and what that’s gonnado is that’s gonna give you thatrichness that depth that a greatbarbecue sauce has so we’re gonna warmup a pan start off with some garlic andonion this is gonna get blended up soyou can rough cut it totally fine somegarlic as well and then I like a spicybarbecue sauce I’m gonna add a bit ofchili in there alright alright add someoil in there so this saw taste[Music]all right so let’s get thatlet’s get that sauteing all right solet’s talk about the ingredients that Ihave here the base that I’m using I’musing a ketchup if you’re choosing aketchup I like to go for a low sugarketchup as much as possible so I cancontrol the sugar and definitely a lowto no sodium ketchup that way I cancontrol the sodium too okay so I havesome ketchup as a base for the acid Ihave some apple cider vinegar as Imentioned for the sweetness I have alittle bit of brown sugar I also havesome blackstrap molasses for thesmokiness I have some Chipotle I’m sorryyes some chipotle in adobo then I alsohave some smoked paprika all right andthen I have a little bit of mustardpowder really kind of ties in a littlebit of bitterness and also heat I’mgonna have a little bit of salt to itand then I’m gonna finish it with alittle bit of butter once it’s blendedjust so it gives it that Sheen that anice barbecue sauce house all rightlet’s saute this up make sure the onionsget nice and caramelized so when itcomes to building soups sauces inparticular you know it’s about buildingflavor so you know look at these earlysteps and sort of building thefoundation of your recipe okay so I’mcaramelizing the onions getting somecolor in the garlic there and whatthat’s doing is that’s bringing out thesweetness in those ingredients all rightso you’re starting you’re starting offthe dish with some good with a goodamount of flavorand then you’re just starting to buildflavor from there okay and you know abarbecue sauce is similar to in myopinion it’s similar to let’s say achutney okay a chutney to where it’sit’s it’s too sweet that you can’t stopeating it but yet too spicy that youcan’t eat it okay so it kind of pushesthe limits of both of those flavorprofiles I love pushing the limits offlavor profiles when it comes to sauceswhen it comes to condiments and thingsof such so this is is good I got somecolor in thereI’m gonna lower that down to a mediumlow all right I’m gonna use some ketchupcan use some vinegar I’m gonna use alittle bit more Siraj why not we’regonna use the smoked paprika we havesome Chipotle let’s just do two littleones all right a little bit of mustardmustard powder we’re gonna add somebrown sugar this is coconut sugar hereand a blackstrap molasses here okay sothe rule of thumb when you’re actuallysimmering and reducing the higher sugarcontent of that liquid the faster that’sgonna reduceokay so keep that in mind especiallywith the barbecue sauce so what I liketo do because there’s sugar in theketchup the sugar in the molasses thesugar in the Siraj I added the coconutsugar too so it’s gonna reduce andthicken up super quick so I’m gonnaactually dilute itthis kind of sounds counterproductivebut I’m gonna dilute it with a littlebit of water all right and what that’sgoing to do is that’s gonna evenlydistribute those flavors okay and sothat’s gonna really reduce it toconcentrate the flavor so if I didn’tadd the water it wouldn’t give you thatconcentration I’d really be looking forokay finish it with a little bit of saltsome black pepper and add some veganwish to share as wellthat’s a nice addition and add a littlebit more water to that all right so I’mgonna bring this up to a simmer and thisis a fast barbecue sauce you know thisis probably only gonna simmer foranywhere from 8 to 12 minutes we’llcheck it will check on the thickness injust a little bit and to get thatperfect thickness before we actuallyblend it and then you can store this andit is so good on barbecue cauliflowerand broccoli andwe also have a seitan brisket that weuse it on that is absolutely deliciousso or just a dipping sauce for some somepotatoes or baked tofu so we’ll be rightback when this is actually simmering allright you can see that it has beensimmering for about eight minutes itsmells so friggin good so much flavor inthe air here so this is ready this isready to blend we’re gonna shut off theheat we’re gonna move this over to mycutting board all right now you candefinitely put this in the blender Ilike to use a stick blender I’m justgonna go ahead and blend this here[Music]this is such a handy tool to have sothat you don’t have to sit there andpour a soup in a blender it’s a lotsafer to doit smells so good all right this lookslike it’s ready to go all right so thatis blended that is blended as smooth asit’s gonna go just so nice so nice soI’m gonna put this back on the burner soonce it’s blended in all those littlebits and pieces are blended smooth youcan then tell how thick you want youryour final sauce so I’m gonna simmer ita little bit longer just to reallythicken it up I like a sticky sort ofthick barbecue sauce all right so thatis looking so freakin good this issomething that I will certainly batchcook because of the acidity in the sugarlevel it will keep for a couple weeks inthe fridge a good barbecue sauce allright so we’re gonna simmer that downfor a couple minutes and then this isdone all right so this is now thickenedup to the consistency that I’m lookingfor oh so good look at that so nice allright so this is when I turn it off it’sthe time I turn it off and I use aboutto give it that real silky Sheen I useabout a tablespoon to a tablespoon ofbutter of vegan butter to finish you caneasily leave that out but I think itabsolutely makes the barbecue is alittle bit of added fat at the end oh sogood look at that it’s all just meltingand yeah so many flavors so manydifferent kicks of flavor you get thekick of the spice you get the kick ofthe acid you know you get the kick of asmoky and then it really is rounded outby that sweetness and you get at the endyou’re like oh my gosh that is so sweetso delicious holy it’s spicy ohthis is my one of my favorite favoritebarbecue sauce is very simple took about10 to 12 minutes to make we’re gonna goahead and ask just scoop it into thesejars so I will make this barbecue sauceespecially on the summertime grillingseason it’s one of my favorites you knowin our book we have on a wicked healthycookbook we have we have barbecuecauliflower ribsbut in the meantime I’m gonna store thisin the fridge and I am gonna getcreative with this during the week sucha great dipping sauce as well all rightthere you have a
